    Default The best restaurant

    Well, I'll be doing my externship in April, so I'm trying to get some ideas of where I should go. The restaurant has to be some what fine dining, not extremely fancy, but obviously no fast food place or hole in the wall either. Don't get me wrong, I love tacos out of a taco truck, and some fast food as well, but the school wont allow that, for obvious reasons, we learned the French techniques of cooking and we have to be able to use them on our externship.

    So, to make a long story some what short, what are some of the great restaurants you have eaten at?? It has to be in the U.S. because I have to travel with my chef's knives, and I guess they've had problems in the past with bringing them on planes and what not.

    I have my black box in like 6 weeks or so (its the FINAL exam, similar to the kind of thing that you see on Iron Chef on the Food Network) and I'm stressing it so much that I haven't been able to really focus on the externship process and time is running out!!

    So, any reccommendations??

    Well we have a pretty good "finer dining" restaurant where I live.

    It's called Cavanaugh's, and it is downtown, on the Casino Aztar property.

    I actually know Max (Cavanaugh; owner) fairly well. If you would like me to talk to him, let me know. He's a pretty good guy all in all, and the up side is that you might be able to work with me for a while if you want to, (since the club is about 3 blocks away from the casino).

    I eared my culinary degree in 98, I entered in the hospitality field.I worked for a very nice hotel restaurant as a entery level manager,1st cook.I realy didn't like it,mass production not a lot of creativity.So I fell back on to personal training.I wish you luck with yor final.I know what you are going through, very tuff

    Well, obviously you know in PDX there is the awesome Higgins but I'm guessing they probably have their hands full because of its stellar rep. Probably slightly easier to get a job there than at the French Laundry. Other restaurants I have known and loved include the Roaring Fork (upscale Southwestern) and Hudson's on the Bend (exotic wild game) in Austin, and Nicola's (Italian) and Jean Ro (bistro) in Cincinnati. There's also DF in Portland, upscale Mexican. But do you have an idea of where you would like to go? Name a few cities or regions and we could probably be more helpful.

    Just up the road from you in Portland, is the Metropolitan Grill in Seattle on 2nd and Madison, I think. Amazing food, great atmosphere, right in the financial district. Daniel's Broiler is also excellent (two locations, one in the soulless wasteland of Bellevue, the other on Lake Washington).

    Lots of choices in Seattle...oh, how I miss that place (at least my memory of it for five years).

    Anywhere, probably not too far away, the East Coast is probably too far. I'll most likely stay in Portland for it just because my mother lives a few hours away in Washington from here and she's going to have my son for the whole 6 weeks of my externship, I'd like to go see him, I've never been away from him for more than a day before, he's 5, so its kind of tough for me.

    But i still am open to suggestion for anywhere else, just in case, do a little research on the place and see if its something I like.


    Higgins is an option, but I think a lot of people go there on externship. One place that is out is Stanford's. I had an interview at the one in the Clackamas Promenade, the guy was an ass, he told me he didn't hire Western Culinary students because they were crap! It is true, that there are a lot of fuck ups in this school, but I am not one of him, I just left as soon as he said that, what a jerk!! He probably just had a problem with my tattoos on my face, they're small, stars, not gang related or anything, but you think that people in Portland would be okay with that by now. Whatever!

    Seattle is another option, I lived in Mountlake Terrace for a while, kind of still know the Seattle area, but who knows where I'd end up. I wanted to go to Disney World for my externship, but i decided that I would feel guilty being at a theme park, and my son is stuck in the "Dry Shitties" (tri-cities, WA)

    Well, any other great places??? Oh, I could do it at the Playboy mansion, but I think they only take one person a year, so I don't know if its open

    Vegas has tons of great restaurants now and you can probably dance on the side too.

    I like Cobras y Matadores in L.A. Very pricey, but there's an extensive tapas menu and you can watch the chef cook. We bring our own Spanish wine and send a glass over to the chef while we eat. My bf likes that place for his birthday.

    Even the best culinary school cannot teach you everything. They cannot teach you the depth of loyalty, and tradition that separate a great restaurant from a flash in the pan, regardless of the trendy appeal of the menu.

    Peter Luger in NYC is about the food and the customer. Trends mean nothing to them. Not a good choice for vegans.

    That would be my suggestion. Vegas is emerging as a culinary destination. Plus you can catch a flight back home anytime.
