    Quick Dinners?

    Hey everyone..i've been juggling a hectic scedule of work and school. I need some quick dinner idea's. I usually get home around 6pm. I want something healthy obviously that doesn't take a hour to prepare. Do any of you 'cook in advance'? Thanks for any idea's you all may have!

    gosh, there is so much

    sandwiches
    salads
    soups
    prepackaged frozen dinners

    I guess it depends on what you like and if you mind eat the same thing several nights in a row. I don't mind, so I "cook in advance" a lot of times.

    Steam some veggies, pan-fry a piece of salmon. Takes 10 minutes.

    pesto and pasta..
    pasta takes about 8 mins to cook
    pesto less than that
    add brocolli to the pesto sauce before pouring on pasta noodles..
    chicken only takes a few miutes to brown and add as well.

    I'm sort of on a veggie kick,but you can add meat very quickly
    veggie stir fry! use froxen veggies
    Wild rice in a bag takes a few mins to cook in bag, add seasoning...
    defrost veggies while cooking rice (just use defrost or enough heat so that they are unfrozen...
    mix up chinese stri-fry seasoning packet (found in asian isle) and stiry fry veggies..
    add to wild rice and it rocks!
    you will need soy sauce and honey (it calls for sugar, but I use honey)
    One packet makes enough for a few meals and if you keep sauce separate from rice until eating, it stays relly well.

    also....

    mini pizzas on thomas english muffins!
    toast pizza in toaster while having stove on broil
    add sauce and cheese to toasted muffin, put in oven until browned..
    aslo works with garlic powder and cheese and use pasta sauce to dip...
    it's more of a snack, but it erally fills and I use whole-wheat muffins or bagels and the good sauce with all sorts of flavors..

    Definitely stir fry...the possiblities are endless. If you want to cook ahead, like I do...take your day off (mine was usually Sunday) and prepare things that freeze and reheat well. I would make beef stew and a soup or chili...stuff like that.

    Every week, I make a quiche (crustless, cuz I'm low carb...actually any of the above can be made low carb, if you need it). The quiche stays in the fridge for the better part of the week and you just have to eat a slice with a nice salad. And, like the stir fries, quiches can be made in endless varieties from ham and swiss to pizza flavored.

    I get alot of frozen dinners, also make sandwiches, grilled chicken salads *you can buy chicken already cut in strips and cooked* pitas, etc. Baked potatoes with toppings are great too, you can cook them in the microwave if you're short on time, add some ranch dressing, salsa, cheese, brocolli, or whatever you want, and presto! Dinner!

    To save time in food prep. get your vegies from the salad bar at the grocery store, saves a ton of time since they're all washed and cut. And the whole roasted chickens most grocery stores sell go a long way too. Happy cooking!

    I love doing breakfast for dinner sometimes - scrambled eggs and an english muffin, or waffles, or some cereal.

    Also, there are a lot of good, healthy frozen dinners out there right now for any type of diet - low carb, vegetarian, etc. Lean Cuisine has some really yummy ones! Look for sales at your local supermarket and you can save a lot of $$$.

    Yeah! Right now i'm on a big wrap kick...A lot of prep work involved but major payoff this week! I usually make a big veggie lasagna and eat it throughout the week but this week I wanted something different.

    I took one of those roasting chickens from the grocery store and pulled the skin off and then took all the meat off it and put it in a tupperware container. Then I cut up veggies (cucumber, shredded carrot, bell peppers) and put THAT in a tupperware container. Throw on some lettuce (I keep bagged salad in the fridge) and cheese in a flour tortilla and you've got a kick ass filling healthy wrap. I just had one after class and although the prep took me a long time, it takes 5 minutes to put together when you want to eat NOW.

    Another good one is toast a whole grain english muffin, pop an egg in the microwave, layer some ham and cheese and throw the egg on there...its breakfasty but I like it any time of day and its really filling.

    I usually cook 2-4 chicken breasts up and keep them in the fridge. Similar to Tiff, I just cut them up as needed and throw it in a wrap (spinach & feta is great w/balsamic) or on top of a salad.

    I also keep a tupperware full of water soaking up some carrots and celery as snacks to keep the stomach full.

    ok i know this is nothing fancy but i love shepherds pie! lol the poor ladies dinner....

    brown hamburger meat with onions chopped up in it.put some lawry's seasoning or whatever spices you want in there. make mashed potatoes from a box. drain meat. put it in a dish. cover meat with mashed potatoes. grate some cheese and put it over the top. stick it in the oven until the cheese melts. oh sometimes i put a can of corn (drained) in with the meat when i put it in the dish. lol i love shepherd's pie.

    then there's always spaghetti, it's really quick.

    I do cook in advance. Casseroles are easiest. Double or triple the recepie and then divide it up into servings that you and your family (if you have one) will eat in one ot two days. I always make enough for my husband to brown-bag to work the next day. Freeze what you are not going to eat that day. Don't forget to label you bags!

    Also, creamed soups are an easy way to use up many of your old veggies. Grill or steam the veggie (depending on what you are using) then chop it up in the food porcessor or blender. Melt some butter, then add a handful of four into it. stir until the flour is absorbed. Add milk until what you have is sort of creamy. tehn add back your veggies and seasoning. Salt, pepper, paprica, curry, nutmeg, and ginger are all good choices. You can adjsut the thickness of the soup by adding milk or flour. You can also beat some eggs and add them in at this point.

    Instead of eggs, you can add cheese, then pour it over pasta to make mac & cheese, or you can put the cheese asuce on steamed veggies.

    Veggie firtata is easy, too. Beat some eggs and milk. add about a half a jar of spaghetti sauce and some grated or shredded cheese. Add seasonings. Put it in a baking pan and bake at 425 degrees, 45 min to an hour, depending on how much you made.
