Xiomara, if all you have is a frying pan, a stove, and some salt & pepper, that would work great, IMO.

Pork chops need not be anything fancy. I just season them (I prefer pepper & garlic salt myself) and pan fry them for 10-15 minutes total (turning them every now and then of course). Yum!

Drop em in a casserole dish and smother with some mushroom soup. Bake for a while and then they get all tender and fall apart like.

    I braise my porkchops.

    - Season chops however you like (I use Cayenne pepper, salt and black pepper)
    - Using a hot frypan, add a splash of sesame-oil for flavour, sear them on both sides untll browned
    - Add a handfull or two of sliced spanish or red onions (not diced). Sweat them until they brown a bit and soften
    - Add garlic and sautee briefly (burnt garlic gets bitter)
    - Add water until the chops are half immersed
    - Cook until done (it's been a while and I don't remember how long it takes), the sauce should be slightly thick (requires practice as to when to add water)
    - Add a tbsp of lemon huice (or balsamic vinegar) to balance, as the onions are quite sweet

I serve mine with parboild rice, but any side will do.

My current fave pork chop recipe:

This pork chop recipe uses apricot jam, and the combination plays nicely on pork's well-known affinity with fruit. You can get this dish on the table in about 25 minutes.

The pork's crispy bread-crumb crust is baked, not fried in this recipe from the January-February issue of Everyday Food magazine. This is not only quick and easy but cuts calories and fat without losing flavor. You moisten the bread crumbs with a little oil, then coat pork, chicken or fish. Bake until golden and the crust will turn out just as crispy as if it had been fried.

    CRISPY APRICOT PORK CHOPS
    # 1 tablespoon olive oil, plus more for baking sheet
    # 2 slices multigrain sandwich bread
    # 4 bone-in pork loin chops (about 8 ounces each, 3/4 to 1 inch thick), patted dry
    # Coarse salt and ground pepper
    # 4 teaspoons apricot jam

Preheat oven to 425 degrees. Lightly brush a rimmed baking sheet with oil; set aside. Tear bread into large pieces, and pulse in food processor until large crumbs form. Drizzle with oil; pulse once or twice, just until crumbs are moistened (you should have about 1 1/2 cups of crumbs).

Season pork chops generously with salt and pepper; spread one side of each chop with 1 teaspoon jam. Dividing evenly, sprinkle bread crumbs over jam, and pat them on gently.

Transfer pork, coated side up, to prepared baking sheet. Bake until crust is golden and pork is opaque throughout (meat should register 150 F on an instant-read thermometer), 14 to 16 minutes. Serve immediately. Makes 4 servings.

You can go the grocery store and either purchase pork chops with the bone or without. I think the ones with the bone are better personally. First remove the chops from the package and rinse them off with water. Set them aside. Beat together one to two eggs depending on how many chops you have. Dip each chop in the egg, then dip them in flour, enough to cover them, afterwards, you can salt and pepper each side of them. Get your frying pan ready by sitting it on the stove and adding about a half a cup of either canola or olive oil, then turn the stove on medium-low heat. Let it sit for about five minutes, enough to get the oil warm then carefully add the chops. Once you add the chops make sure the oil barely reaches the top of the chops. If not add more. Go ahead and turn the heat up to medium and keep and eye on the chops. Turn them every 5-7 minutes to check for a brown, crisp chop. They should be ready in 20 minutes. If you aren't sure as to whether they are ready you can cut one open to be sure.

I love the commercial where they refer to pork as the "other white meat". The white meat from chicken is dried-out, tasteless crap, unless prepared properly (I'm a leg/thigh kinda guy!)

Porkchops are basically the same thing, so it seems the advertising guys hit the nail on the head with that commercial! That's probably not the reaction they were looking for.

It's because they've bred out all of the delicious fat trying to make lean meat! It's terrible. Goes for beef, too. I'd rather have less delicious fat meat that a lot of lean tasteless stuff. Stupid farm industry. You have to find the store that carries stuff from the small farms since it will be much tastier.

By the way I prefer to pan-grill my pork chops very simply with oil, salt and pepper. Or roast them in the oven which requires no attention at all. Love them with a baked sweet potato. But there is this place, Cooper's BBQ, in Llano, TX, that makes an amazing smoked pork chop that's not to be missed, and that's the best I've had.

I've never been to Texas, but from what I've heard they do everything right when it comes to meat!

There's a place in Toronto that specializes in Organic meat. It's pricey (more than twice the $$ per lb. vs. the supermarket), but I can't say I've had anything better!

The meat they sell at the supermarket may be cheaper, but it's disgusting!!
