    Thumbs up Fajita Salad

    This is my absolute favorite summer meal! I'm sitting here relishing my second helping right now, and I thought I'd share my recipe with anyone here who wants it. (And yes, then I am going to get some work done.)

    1 or 2 lb. steak, cut into small strips
    Fresh chopped garlic to taste (I use half a head)
    1 can corn, drained
    1 can kidney beans, drained and rinsed
    2 green onions, sliced
    Large bag mixed salad greens
    Crushed tortilla chips

    Dressing:
    1 small (8 oz.) bottle balsamic vinaigrette
    2 Tbsp cumin
    1 Tbsp cayenne pepper

    Make the dressing first. Mix the spices into the dressing (add any other fajita seasonings, if you like). Pour 3/4 cup dressing into a bowl and set the rest aside.

    Add raw steak strips and garlic to the dressing in the bowl. Mix it up, cover with plastic, and marinate. I do this step first thing in the morning and let it marinate until just after lunch.

    Heat a small skillet and pour in the steak, garlic, and marinade. Let it sizzle just until steak looks cooked, then remove from heat. Steak should be about medium-rare. Put steak and garlic into a large bowl and discard the greasy marinade.

    To the large bowl with steak and garlic, add the corn, beans, green onions, and remaining dressing. Mix well. Cover and refrigerate until dinner time, so that it's all nicely chilled.

    When ready to serve, add salad greens and crushed tortilla chips. Mix well. You can also add shredded cheese if you want.

    It sounds like a lot of work, but it's really easy and it's SO DELICIOUS! It's incredibly filling too, which you wouldn't expect from a salad. The leftovers are really good in tortillas with Spanish rice, or just on their own. This makes a lot of salad, BTW. I hope y'all like it!

    That sounds sooo yummy. Have you ever tried it with chicken? I'm not a huge steak fan. May have to try it though

    I haven't tried it with chicken, but I'd imagine that would be just as good. Just make sure you cook it thoroughly! Undercooked steak is delicious, but undercooked chicken is salmonella. Other than that it should all work the same way. Let me know if you try it with chicken and whether that's good!

    Maybe next time I'll try chicken just to do something different... but I do love steak.

    Oh yeah, and if you like other fajita veggies, like white onions, bell peppers, squash, etc., you can just put them through the same process the meat goes through. I've done it with thin slices of white onion and yellow squash before, and it's just as good. (I HATE bell peppers, personally, so I don't use them. But if you like them, go for it.) Basically anything you'd put in a fajita is fair game.

    My friend also likes to add a diced tomato with the salad greens, and sometimes I throw in a cucumber. This recipe is really flexible, so just go with whatever additions you want!

    Oooh the veggies sound good. I'm not a big meat eater, so maybe I'll try it with some different veggies instead. *drools* Must go shopping!

    If you don't eat meat, you can use portobello mushrooms instead of the steak. Sometimes I use the portobellos AND steak together. It's delicious. For a vegetarian version, I'd probably put together some portobellos, white onions, yellow squash, zucchini, and bell peppers if you like them.
