Default meal ideas for the single woman

    hello all,
I live alone, and I often find that with the lack of hours in the day, and me living alone, there is not enough time to prepare meals for myself. Im a fantastic cook, but I hate going grocery shopping because all the food goes bad before i can get to it. If i do prepare a meal, I have so much food left over that I cant eat it all beofe it goes bad or before i get sick of the leftovers. I was just wondering if anyone had any tips for quick meal ideas. Or maybe grocery lists. im spending too much money on eating out, seeing how im picky and hate fastfood. and sometimes a grocery visit for me can add up to $200 of my hard earned booty shakin money. any suggestions?

Trader Joe's. Their salads, their prepackaged meals, the smaller sizes of their entree meats, their frozen stuff. -shrug-

I second the Trader Joe's suggestion, I shop there all the time. She lives in Canada though, and I don't know if TJ's is up there or not.

ahhh....hmmm, otherwise I'm rather clueless unless it comes to buying meat and cheese by the pound for sandwiches. If you're a defroster, buy different meats, and then you'll just have to buy your veggies each week. You could probably use some frozen stock too to change things up with soup.

Some filling meals that you can freeze & re-heat the leftover portions:
chili, spaghetti, lasanga (<sp?), roast beef & mashed potatoes, also "sandwich fixings" you can throw in the fridge drawer & make a sandwich when you can't splurge on a meal out......

Ps Meal prep time on most of these is short, shorter if you buy part of the dish pre-done.

If you are simple like I am and not on a diet, buy some of those ramen noodle cups, can of spaghettio's,cans of various soups, half pound or even less of deli meat from the deli, single serving macaroni and cheese for the microwave, frozen tv dinners (some are really, really good like that bistro kind and healthy choice and so many varieties)good luck

From the Martha Stewart world, "Everyday Food" magazine always has a section with recipes for one. Run by the library and copy them down!

Enjoying to cook, and cooking for 2 or less is a hard thing to overcome. I love to cook and over the years I've gotten to the point where I can do it for just the three of us or even myself. A recipe book for 2 could help. Also reducing the quantity of ingredients in some recipes.

A little planning will save you some time. If you know what you like, or even better what you are going to make, buy the ingredients just for those dishes. Don’t forget to spice it up a bit though. Having the same meals every day is not good. As suggested before if you can find good pre-made food, take it. Even those that love to cook need a break once in a while.

There are some great leftover dishes, lasagna, pasta (red or white sauce), and any type of casserole, quiche (using store bought crust), and scalloped potatoes. Just watch how much you eat, scalloped potatoes can really pack it on. If I make any of the leftover dishes, I tend to cut them up and stuff them into the freezer, so I have something quick when I need it.

Simply, cook less, freeze what you can, and have a leftover night. Maybe you can find someone to swap meals with? You know, go to their house one night, next time they come to yours. That way you can cook a lot, have some company, and even get some different food.

I have problems with that. But then I also hate to cook. I'm going to get a personal chef to cook some meals for me that can be split up into individual portions and frozen. If you like to cook you could do the same for yourself. Cook it all at once and freeze it.

Mainly I go to places like Quizno's and get Salads or occasionally if I do cook I'll buy two steaks and veggies and eat it over two days. But I too am really bad about having food go bad. I'll buy a pack of cheese and eat it twice and the rest goes bad so it's a huge waste and I'd rather just eat out.

500g of cheese (block), bread (the darker the better), rice cakes, alfalfa, hommus spread, one other type of spread, tomato, can of buttered mushrooms, tin of spagetti (in sauce), microwave-able steam-ed vegies (frozen until I need them), 5 pack of 50c noodles (that's my name for the noodles lol), pasta, pasta bake, parmesan, eggs......

Since I'm not a big cook and I do like fast easy to prepare meals... the above is just some of the items on my shopping list. I like to make sandwiches and have rice cakes with stuff on them. Make a pasta bake once a week, add the vegies and/or mushrooms to give the meal that something more. Sometimes I will make the 50c noodles with the vegies and/or mushrooms.

Basically, I'm a cheese freak/lover and have been known to just have the 50c noodles flavourless with melted cheese through it ... and be satisfied with that... lol!

Otherwise, for the Australians... you can try something like ordering just the dinners from Lite N Easy. I did this for a period and can definately attest to their microwave meals being great! They would usually last me for two meals....

I swear by pasta when I'm cooking. A large lasagna will last over a week! Whenever I bring the lasagna into work for luch, boy do I get envious looks.

Plain old spaghetti with either a canned or homemade sauce works nicely too.

I have a sandwhich every other day (alternate Tuna and Salmon), with soup (either homemade or purchased) and an apple.

I eat out a lot too, of course. I try to mix homemade with take-out when I can tho.

The frozen meals are awsome too, but you have to watch the brand you buy because some of those products are awful!

Grilled chicken breasts and frozen veggies. I survived on them for years. You can change your chicken from blackened, to italian, garlic, cajun, lemon pepper. I would mix this up with tuna salads or sandwiches, veggie burgers (I like morningstar farms best), and for pasta I would occasionally buy one of those diet meals (Lean Cuisine, Weight Watchers, Healthy Choice). It may get a little boring, but you can keep your chicken frozen, and it will keep forever. It should help with the grocery bill.
