    Quick, healthy Dinner Recipe!

    Hello ladies,
    Just thought i would post a easy healthy recipe for you guys. I had it for dinner tonight and it's amazingly simple and healthy. Here it goes...
    Several Fillets of Boneless Codfish..(2-3)
    1 jar of Salsa or Picante Sauce
    Juice of 1 lemon.
    Salt/pepper/lemon pepper
    PAM spray


    Line a broiler pan with tin foil. Spray with PAM, line fillets next to each other in the pan, pour over salsa/picante sauce, lemon juice, and seasonings. Bake or broil 350 for 18 minutes or until fish flakes easily with a fork.
    Can serve with rice pilaf, salad, baked sweet potato..
    quick and healthy..enjoy ladies!

    Oooh, that sounds amazing..

    Too bad I don't eat animals anymore! I would have definitely tried that.

    ^Yeah I do. I've never made it myself though, I've only gotten it at restaurants.

    I'm not really sure how to make it myself.

    meat + salsa is a VERY simple idea. I used to do it with chicken.

    Pink, you might wanna check out Tofu Cookery by Louise Hagler. Great cook book! Here's one of my favorite tofu recipes...

    Korean BBQ Tofu
    1 1/2 lbs firm tofu cut into 1/4" slices

    Marinate for at least two hours in mixture of
    1/2 cup soy sauce (low sodium is best)
    6 Tbsp sugar or sweetner (honey is great)
    2 tsp dry mustard
    4 cloves minced garlic (or 1/4 tsp garlic powder)
    2 tsp onion powder

    brown tofu on both sides in 2 Tbsp olive or sesame oil. Garnish with chopped green onion, shrooms, or snow peas over rice.

    I gave up vegetarianism years ago, but I still use the marinade for salmon, chicken, and ribs... It's delish!

    I don't have a gallbladder.... so I can't eat fat...

    I do it with tofu or quorn chicken peices mm quorn is good!

    Holy crap! Just got myself a Magic Bullet (the kitchen appliance, not the sex toy) and it ROCKS!!! I made gazpacho, guacamole, & mashed potatoes with it so far and it's so quick & easy! It's got a few good, healthy recipes in the recipe book they give you, but my favorite thing so far is using it to blend my shakes with fresh fruit in the mornings! Okay, I lied... the guac is my fave!

    Here is another easy recipe for you all.. it can be done with chicken or fish..

    2-3 chicken boneless skinless chicken breasts or 2-3 fillets codfish
    Juice of 1 lime
    Jerk seasoning (optional)
    Mild salsa
    1c. chopped mango
    1c. chopped red pepper

    Rub chicken/fish with jerk seasoning, lime. Bake till done. Toss salsa with mango and peppers. Pour over top and serve. Enjoy!

    I was wondering about getting one of those too. I dont have room for a full blender in my house. Is it really that easy to clean as they say? Sorry, dont want to thread hijack just curious.

    Quorn ROCKS!! Not the healthiest since it is still processeed with a TON of sodium...but soooo yummy!!!!

    Boca makes awesome spicy "chicken" patties too ...great for amking sandwiches with...in fact I just had one for lunch!

    I cant cook tofu to save my life....of course, I could never cook fish without screwing it up either..so it's me, not the tofu! Thankfully my husband didnt marry me for my cooking..<wink>!!


    Montana...I have gallbladder(and pancreas) issues too....but at least my husband cant complain when I buy all low fat stuff anymore! It isnt just about vanity...its actually for my own health! Of course my dr. has me on a Molotoc cocktail of prescriptions to keep me from having to have my gallbladder and pancreas removed...15 freakin' pills a day..NOT counting stuff like sleeping pills or pain pills tha I only take on an as needed basis. My grandmother didnt take that many at the end of her life!!! I feel SO old when I look at all the pill bottles on my nightstand!

    Yeah quorn occasionally, tofu is good if marinated properly

    I use a japanese steamer, great for salmon, vegetables- veg left really firm n tasty, Worth a try!

    Super easy. You can throw it it the dishwasher, but since it only comes with two blades (a whipping & a blending) I was it by hand after every use without problem.

    Wanted to add one more:

    1 pkg of extra firm tofu
    low sodium taco seasoning packet
    salsa
    low fat cheese
    fat free black beans
    whole grain tortilla or wraps

    How to:
    Brown tofu with a bit of olive oil.
    Toss in taco packet. Just add water as needed. Mine called for 3/4 cup but I put 1/2 cup instead so it wouldnt be too juicy.
    Heat beans.
    Put everything together and walla mealtime!

    These tofu recipes sound so good.. here is an easy wrap recipe
    Its so hard to find the Spelt wraps or sprouted grain ones but when I can I stock up i feel so much better after eating vs the wh wheat ones they are much lighter

    to soften wrap instead of microwaving put between damp paper in a bowl and cover bowl with damp steaming towel for few minutes

    filling:
    blender chick peas and spices
    Spread on wrap like you would butter

    sliced avocadoes
    sliced sweet onion
    sliced tomatoes (squeeze out juice or will be all over you)
    lettuce

    to get veggies that i dont like in a sandwich use vegetable peeler to do thin little swirly strips of cucumber and carrots ..

    for a dipping sauce if you want
    i think its annies brand ? Goddess dressing or shitake mushroom

    for creamy one .. i havent tried but read about Cashews in blender with water and spices to make like a creamy paste

    another option is use black beans and spices instead of chick peas do the whole avo, tomato, onion filling too

    i have a frozen berry pie recipe too if you want it

    i smoke and drink and love coffee but so far my food food is getting fresher and i feel so much better
    with creativity plain fruits/vegetables/beans and the right spices/condiments really are good ..and cheap and so much less package waste in the trash can

    Hollow a tomato
    Crack one or two eggs and pour inside tomato
    Microwave on MED for 5-7 mins.
