    Thumbs up Corn Casserole

    This is an old standby of mine and I thought I'd share the recipe. It's simple and delicious... good enough to take to someone's house, and easy enough to whip up at home when you want comfort food.

    CORN CASSEROLE

    2 eggs
    2 Tbsp flour
    2 Tbsp sugar
    1/2 cup milk
    1 can creamed corn
    1 can whole-kernel corn, drained
    1/2 cup butter

    Preheat oven to 350 F (170 C).

    In a large mixing bowl, beat eggs. Add flour, sugar, and milk, and mix well. Stir in corn.

    Melt butter in microwave and pour into 8x8 or 9x9 casserole dish. Move the dish around until melted butter covers the bottom. Pour in corn mixture and bake, uncovered, for 30-45 minutes or until golden brown on top.

    Serve hot.

    Be careful... it's the kind of thing I always wind up eating too much of. I especially like the edges, where the melted butter burns to the pan. Delicious. Totally comfort food, which is nice for me because I am seriously hormonal tonight.

    Ohh..I make this to, it is really good. I crush up some ritz crackers, mix with softened butter and sprinkle on top befoer I bake it...really good.

    haha....yea same here. My favorite comfort food is:
    --1 can tuna
    --egg noddles (i never measure...but however much you wanna cook)
    --a bag frozen mixed veggies (or less, again, i dont measure,just whatever looks good)
    **cook the veggies, cook the noodles,mix those two with the tuna. salt and pepper.** comfort!!

    Hmm, I think we need a cooking forum.

    But just two questions:

    1. What's an oven?
    2, Wouldn't beating the eggs break them?

    You can all tell that I can't cook to save my ass.

    I've always fancied my kitchen as more like a labratory. Most experiments fail, and occasionally something catches fire or explodes. I do make a mean microwave chili macaroni though. You're all invited to stop in and try it, provided you sign a waiver of liability.

    Ever since tryng my ex bf's mama's Tuna Casserole, typically, the mere thought of any casserole typically makes me shudder, but this one actually sounds good.

    Sounds good. Makes think of the totally ridiculous and rich corn pudding they serve at the Cupboard in Memphis . . . sweeeeet and custardy . . . mmm. If only I could have that casserole and some cornmeal-crusted fried green tomatoes right now.

    My mother won't get back to me on that. I've asked her over and over, but she's working full-time, maintaining her house, and raising three teenage sons. My 15-year-old brother recently smashed his elbow trying to jump a rock pile on his bike, and he had to have a lot of surgery and pins put in, so she was taking care of him... I guess she just hasn't gotten around to typing out the recipe and emailing it. I have asked her repeatedly though. I'm supposed to call her later today and maybe she'll have time now that things have settled down some and my brother is back in school.

    OMG, Susan, the Cupboard... I do love their fried green tomatoes! They're the best ones I've ever had. Everything at the Cupboard is phenomenally delicious and they don't put pork in their turnip greens, so I can actually eat them!! I love pork-free turnip greens, my favorite treat ever. I took my boyfriend to the Cupboard the last time I was in town. When I was a kid, we used to eat at restaurants like that all the time but there are so precious few little Southern restaurants like that left nowadays.
