I like having a pole and being able to do floorwork, but let's be honest here: there's plenty of dancing to be done without props. I don't think that it takes the dancing out of it at all; rather that it shows just how many of us can't actually quote dance unquote. Those dancers are striking poses and strutting because they ain't got moves! We are used to our familiar stages -- the first time I had to dance in a club like that, I was at a total loss as well. But then you realize that you can move sexily without having to climb, swing around, or crawl on something (though if motherfuckin' Bob Fosse can have his dancers on the floor it's definitely good enough for strip clubs).
I think it helps to take a look at burlesque videos and jazz dancers for ideas on moves and steps to use; you just take them and stripperize them by exaggerating the hips, shoulders, and hair tosses. It's plenty possible to be entertaining and have enough to do without poles or floorwork, it just takes getting used to. But just think how much better than everyone else you'll look by being able to work that stage rather than just posing!
