    Default Turkey Stuffing

    Okay, Vons has 17-23 lb turkey's on sale for $7!!!

    I think I remember someone putting chopped up apple in their stuffing and it was really good... I got some box stuffing and it calls for green onion and celery. Do you think it would be okay for me to add the apples or would that mess something up?

    Nope it won't mess it up at all. You can always add to boxed stuffing mix, I almost always do.

    Yep, it will be yummy! I'm already hungry. I love stuffing, beacuse I LOVE giblet gravy, the real kind with the hard-boiled eggs in it. I can eat that shit like soup my friends!

    Stuffing is groovey because realistically you can put almost anything you like in it. Yeah for stuffing!

    Apples!
    Chestnut and apple stuffing:

    6 tbls butter
    2 loaves Italian bread, torn to bite sized pieces
    2 medium onions, chopped
    2 stalks celery, chopped
    2 lagre Gala or Fuji apples, peeled, cored and cut into thin slices
    2 14.5 oz cans reduced-sodium chicken broth
    1/4 cup coarsely chopped fresh sage
    1 jar (7 oz) dry packed cooked chestnuts, coarsely crumbled
    3 large eggs

    Preheat oven to 375*. Grease 8 inch square baking dish, set aside. Arrange bread in a single layer on two rimmed baking sheets. Bake until dried, about 15-20 minutes. Meanwhile, in large saucepan over medium heat, melt butter. Add onions and celery. Season with salt and pepper. Cook until tender, about 4-6 minutes. Add apples, cook additional 3 minutes. Transfer to large bowl.

    In same saucepan, bring broth to boil. Remove from heat.

    To apple/onion mix, add bread, sage, chestnuts and eggs. Season with salt and pepper. Add half the warmed broth. Toss to combine. Continue adding broth until mix is moistened but not wet.

    Use about 4 cups to stuff turkey. Put remaining stuffing in the baking dish, cover with aluminium foil and bake 25-30 minutes. Uncover and bake until golden, about 15 minutes more.



    For those who want to avoid heavy bread-like stuffing:
    Wild rice, walnut and cranberry stuffing

    2 tbls butter
    1 lg onion, finely chopped
    4 cloves garlic, minced
    2 6 oz boxes wild-rice blend (throw out seasoning packets)
    1 1/2 cups toasted walnuts, broken into small pieces
    1/2 cup dried cranberries
    1/2 cup finely chopped fresh parsley

    In large saucepan melt butter over medium heat. Add onion and cook, stirring, until soft and golden brown. Add garlic, cook one minute. Season with salt and pepper.

    Add 3 cups water, bring to boil. Stir in wild rice blend. Return to boil. Reduce heat and simmer, covered, for about 30 minutes (or until all liquid is absorbed). Remove from head and let stand for 10 minutes.

    Transfer to large bowl and add all remaining ingredients. Can be served immediately or held at room temperature for up to 5 hours. Serves 8.


    I have so many Thanksgiving recipes, it's almost sickening.

    Try it with Golden Rasins in it... they plump up when it's cooked and it taste sooo good!
