    So I was about to fall asleep, but I wanted to post this first.... I was putzin around at the bookstore when I noticed this little guy:

    Now, as you all know, I'm totally getting into the healthy lifestyle and there is a lot of really good options in here. Unfortunately there is meat in this, (I was looking for vegetarian based food I can try out. Now, I am not planning on going vegetarian *poot* but I wanted to taste some full vegetarian cooking, and try to incorporate the forman into my attempt at Iron Cheftitude....

    Then I noticed something.... Donna Kelly.... oh that name worked on Amazing Spider-man for a time (Still haven't validated if they are one in the same) but I decided to search by her name, then I found this...




    Now that's not coming out till the 15th of April... but this tofu confuses and fills me with odd emotions... I have never had it before, to my knowledge, yet... I want to know a hundred and one things I can do with it...

    Now I have it on very good authority that this book will be fantastic, and completing it will open a seal of the apocalypse... but first.... humble vegetarians, tell me of this interesting noun/verb/adjective....

    I tried it straight from the wegman's container... not good....

    So until this masterpiece of culinary genius arrives that I shall pay to have authors sign and have babies for them to kiss and such, is there any suggestions where I can try good tofu?

    All joking aside, thoughts? questions? What are 101 things YOU do with tofu?

    Make teriyaki tofu stir fried with veggies such as squash, mushrooms, etc. Very yummy.

    well, you get a General Tso's sauce (I get mine at Trader Joe's), mix it with tofu and put it on rice and vegetables. I also add red pepper flakes because I like to feel the burn.

    I am worried this won't live up to your expectations. You seem to think I have the key to some ancient mystery. My JRT is still wild. He likes General Tso's tofu too.

    I had this stuff with tofu not long ago and it was awesome. It was like some kind of noodles, tofu, maybe some carrots and peas or something? I dunno. I can't remember the name of it but all my friends knew what it was called so it must be pretty common. It tasted awesome!

    Basically Mast, you can use tofu to replace any meat in almost any dish. Theoretically. I haven't tried this so can't vouch for it myself. Tofu is really just filler that takes on the flavor of whatever you mix it with - you don't really *taste* the tofu itself. Much like potatoes, only healthier

    Flavor the dish well and the tofu will taste good

    General Tso's---Tis true! In order to get the real effect you have to batter and fry the tofu, then stir it into the veggies and sauce. It's amazing.

    I love fried tofu recipes. My favorite: Cut extra firm tofu into cubes. Dredge in flour, then in soymilk. Finally, dredge THAT in nutritional yeast seasoned with SPIKE (awesome all-around seasoning that is basically just every single cooking herb and spice you can think of. When I don't have it I just put a pinch of everything I have in my cabinet and it approximated the taste.) Fry cubes in shallow oil. Eat. Have multiple orgasms.

    make sure you blot the water off the tofu before you cook with it!!! Maybe this is obvious to everyone else, but I had a horrible, painful accident once....

    Indeed!

    The solution to the JRT... Let me play with him. When I am done, he will want to sleep while I'll still have about half of my energy.

    The coolest thing about JRT is they always wanna play. The worst part about them is, they always want to play.

    However, does your JRT like to feel the burn? Cause I don't.

    It's a horrible affliction, I love the taste of spicy stuff, the added flavor.... but not the burn.

    Marinate in BBQ sauce/Balsalmic Vinegar/whatever you like. Squish all the water out. Bake. Yummy.

    Next time you're in Pgh go to the Co-op... they have a hot food buffet where you can taste LOTS of things with Tofu in them, and the ingredients (ie, approximate recipes) are all listed.

    Yup! It can also be used to replace the dairy in some things for vegans, like replacing the ricotta in lasagna or manicotti & the like.

    Mast, also know that there are different varieties of tofu. The most common kinds are either firm or extra firm, and this is what's great to use in stir fries and the like. (Helpful hint: if you want it to be even firmer and a bit chewier, freeze it first. Then then you defrost it, let it cool and squeeze out ALL the water - you'll notice that its entire texture has changed; has become springier and more porous, like a sponge. Cube it and proceed with whatever recipe you're using.) But there's also silken tofu, which is MUCH much softer and good for soups and creamy drinks, and especially great to use in desserts.

    Speaking of dessert, try this: This is the foundation of several other tofu-based desserts, but it stands very well on its own. It’s a little bit denser than your standard chocolate mousse pie, so the result is more like a flourless torte. It actually uses firm to create the denser texture, even though I was just talking about the silken.

    Pretty simple:

     1 brick o’tofu, soft or firm. I use the standard 14 ouncer - make sure to pour off the water from the container AND press the excess moisture out (do NOT do the freezing thing here, though, whatever you do).

     1 12 oz bag chocolate chips, preferably dark, but semisweet can work too.

     2-3 T powdered sugar (you can add more to your taste, but be careful – it’s a fine line between rich and sweet. Add more in small increments.)

     1 tsp. vanilla extract

    And that’s IT!

    Okay, so melt the chocolate (carefully, don't let it burn). Break the tofu into small chunks and put in a high speed blender, or, ideally, a food processor.

    Add vanilla and sugar, then add dollops of melted chocolate in, globby spoonful by globby spoonful. I found that I had to keep re-stirring the mixture and then packing it down, blending again (on HIGH), repeating the process until smooth. Be patient! It looks thoroughly unappetizing at first, but be patient. The result pays off.

    When fully blended, pour into a pie shell. A prefab graham cracker crust works perfectly, or you can make your own in a springform if you prefer.

    Chill for at least 1 hour. Serve and amaze your friends that TOFU is in this seemingly decadent dessert.

    tofu. i tell myself i hate it... but then when those chinese wizards down the street douse it with a hearty dose of soy sauce and MSG, it makes the tastebuds dance and sing (though that would also probably be true for a little piece of foam)

    I love tofu! It's my favorite food. Definitely make sure you get the water out; when I used to mess it up, it was because it was too wet. I buy the block, pour out the water, and wrap it up in a clean dishtowel, then put it on a slanted cutting board in the sink and put another, weighted cutting board on top to press out more water. Leave it there for an hour or so, then cut it up and do whatever you're going to do with it.

    You can also freeze it after draining it. Once you thaw it, the tofu will have a chewy, chicken-like texture. It's really good torn into big shreds this way, and added to stir-fries or pasta.

    I also like to take big pieces of fresh drained tofu, dredge them in cornmeal, fry them, and then dust them liberally with Tony Cachere's Cajun seasoning. Makes a delicious snack all by itself.
