I whipped this up the other night and it was so fucking good I had to share!
2 cans artichoke hearts, drained and chopped
1 bag frozen chopped spinach, thawed and drained
2 cups shredded mozzarella
2 cups shredded Parmesan
1 small jar mayonnaise
1 small container fat-free sour cream
Combine everything in a large saucepan on medium heat stovetop. Heat and mix, stirring constantly. If the cheese gets stringy instead of creamy, add a squirt or two of lemon juice to separate it. Once the mixture is combined and creamy, pour into a crockpot to keep it hot and bubbly, and serve with chips, crackers, or bread.
This is seriously good dip and it's super-easy. I just put the last leftovers on a baked potato and it was good that way too!
