    Default Hot Food Ideas?

    I need some (low cal) warm food recipes. Like, quickie stuff more than anything... I'm SO tired of soup!

    I love this recipe. It's easy, cheap and keeps well. I usually make a double batch, and occasionally add black beans (when coking the chicken) for extra nummy protein.

    Chicken Salsa Fiesta (makes 6 servings)

    2/3 cup Bisquick Heart Smart® mix
    2 tablespoons water
    1/4 cup fat-free egg product or 2 egg whites
    1 1/2 cups shredded reduced-fat Cheddar cheese (6 oz)
    3 boneless skinless chicken breasts, cut into 1/2-inch pieces
    1 1/4 cups salsa

    1. Heat oven to 400°F. Spray 8- or 9-inch square pan with cooking spray. In small bowl, stir together Bisquick® mix, water and egg product; spread in pan. Sprinkle with 1 1/4 cups of the cheese.
    2. In 10-inch nonstick skillet, cook chicken over medium-high heat, stirring frequently, until outsides turn white; drain. Stir in salsa; heat until hot. Spoon over batter in pan to within 1/2 inch of edges.
    3. Bake 22 to 25 minutes or until edges are dark golden brown. Sprinkle with remaining 1/4 cup cheese. Bake 1 to 3 minutes longer or until cheese is melted.

    This is one of my staples. Two days after I left my ex, he called for the recipe and said he couldn't imagine the rest of his life without it. My boyfriend likes it too, and he ordinarily hates eggplant.

    Peel and cube an eggplant; peel and chop a few cloves of fresh garlic and half a small onion. Saute in olive oil with a little salt and pepper and a bit of Italian seasoning until eggplant is mostly cooked. Pour in a cup to a half-cup of cold water, broth, or white wine. Mix in a couple of peeled, chopped carrots and enough spaghetti sauce to make a thick stew-like mixture. Turn the heat down to very low and cover. Simmer about ten minutes. Serve over baked potatoes or rice. If you like, sprinkle on some Parmesan.

    Try some Asian soups/Stews? I love Kimche Chigae on a cold day. I can provide a decent recipe for Hot and Sour soup, but the basic stock takes ages to make.

    Wish I could make Pho (Vietnamese soup).

    Brown rice and black soy beans. Black soy beans are great for fiber as well as lower in carbs than regular black beans.
    But I love soup. It makes me poop.

    This might take a bit at home but you can make mass quantities.
    *Take frozen chicken tenders and cut them into bite size pieces. Cook.
    *Get brown basmati rice (tastes better than regular brown rice) and cook.
    *Get frozen green beans (the long kind) and cook.

    Ive been living off of that for over 4 days now. I make huge amounts and store the rest away.

    I'm a big fan of one of my friend's dangerously delicious burritos. The mix goes a long (long long long) way, but it freezes well and keeps for about a week in the fridge after freezing. I make a big 'ol batch, freeze it in those cheapy rubbermaid containers, and nosh at will.

    Molly's Flaming Burrito Mix:
    1-2 onion(s)
    oil
    lots of chili powder (4+T, I think)
    cumin, ground (1T or so, to taste)
    garlic (2+T powder, a few cloves, a whole bulb, some combination, whatever)
    1 can corn (regular, not creamed)
    1 can black beans
    1 can kidney beans
    1 can chili hot beans
    1 can vegetarian chili
    large handful brown rice
    4 jalapenos, chopped, with seeds
    1-6 habaneros, seeded, deveined and chopped

    Saute the chopped onion (and garlic, if using fresh) in a couple tablespoons oil in a large pot. When the onion is just getting translucent, dump in the chili powder, cumin, and garlic powder (if using) and stir until the onion is coated. Dump in corn, beans, and chili without draining. Add brown rice and stir well. Add hot peppers. 1 habanero = a nice spice, 2 = definitely a little kick . . . 6 = will cool you down during a hot spell in an Arizona summer. Bring it to a simmer, then reduce heat to low and cook uncovered for a couple hours or until the rice is well cooked and mixture is thick. Serve alone or in a tortilla with reduced-fat sour cream and a little cheese. I like to keep it around for something good to nuke when I'm in a hurry.

    Beans + corn = whole protein and beans + rice = whole protein, so it's a good meal for lean protein.

    I've got a metric ton of killer recipes but I don't have the faintest idea as to caloric content...

    Like ummm... this pasta recipe



    1 tablespoon olive oil
    1 pound sweet Italian sausage, casings removed
    3 to 4 cloves garlic, chopped, optional
    1/2 cup chicken or vegetable broth
    1 (28-ounce) can crushed tomatoes
    1/2 cup heavy cream
    Salt and freshly ground black pepper
    1 cup frozen green peas
    Heaping Tsp Basil or about 20 leaves fresh basil
    1 pound penne rigate pasta, cooked to al dente
    Grated Italian cheese

    Heat a large, deep skillet over medium high heat.
    Add olive oil.
    Add sausage meat. Crumble sausage meat as it browns.
    Add chopped garlic to the pan. When all of the crumbles have browned evenly, deglaze the pan drippings using chicken or vegetable broth.
    Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer.
    Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes.
    Season with salt and pepper.
    Stir peas and basil into your sauce to combine.
    Toss hot drained penne rigate in pan with the sauce, then transfer pasta to serving bowl.

    Oh, I almost forgot!!! Green Giant makes steamed veggies that steam in their package, in the microwave. I love them bunches and they're ready in 5 minutes. Plus, they taste like fresh-picked.
