    Baking Chocolate

    A friend went to Peru for the holidays and brought me back a pound of Peruvian baking chocolate. It's very creamy and has vanilla in it, but it's quite bitter and definitely just for cooking. I haven't baked in ages and I don't know what to do with it. Suggestions?

    Maybe mix it in with some brownie batter and make super chocolatey brownies? I made brownies today, and I baked them in a penis shaped pan. hahaah

    ^oh yeah. Flourless chocolate cakes are the answer. To all of life's problems, really. I have at least six different recipes....

    BUT! Since it's special Peruvian chocolate...I'm thinking maybe you should do a real Central/South American hot chocolate thing...I think I have a recipe somewhere...I'll look....

    Then there is the possibility of doing a mole sauce....Maybe you should do some googling....It'd be cool to find a real Peruvian recipe to use....

    Lots of fabulous recipes there. They also have lots of tips and how-to videos for techniques you may not be very experienced with

    Usually the southern american hot chocolate drinks have cayenne in the chocolate. With the vanilla, I'm thinking you'd be better off with something sweeter.

    Don't you guys do fondue? Chocolate fondue can be fun. Strawberries, cheesecake, anything can make great dippers.

    Nic, if you find a good mole sauce, PLEASE (!!) post it! I can't get a good one to save my life.

    I was thinking mole, but I've never made it and I don't know how to find a good recipe. I don't want to waste good chocolate on a bad recipe. So yeah, anyone with a good mole recipe, share it!

    As for sweets... I guess I'd have to add a ton of sugar? I used bitter cooking chocolate when I was a teenager and I used to bake, but for the life of me I can't remember what I put it in.

    Here's a link to a random blog entry about making authentic Mexican mole; it sounds like a very serious undertaking!

    She mentions that she uses a Rick Bayless recipe; I believe he is well-known as one of the best authorities on Mexican food, so HK, if you want a good mole recipe, I might start with his cookbooks. Personally, I've never made mole--in fact, I don't even think I've ever eaten mole, though it is on my short list of culinary experiences I must have in the near future.

    Hmmmm.....I still think you should try to find a Peruvian recipe with chocolate in it.

    On the other hand, if you just want something that really showcases the flavor of the chocolate, I'd probably go with a flourless chocolate torte.....Do you need a recipe? I've tried a few of mine, but not all of them. I haven't discovered the perfect one yet.....because I like them really dense; some of the ones I've tried have been too mousse-like. I think this is a function of the number of whipped egg whites you fold in. Are you a big fan of flourless chocolate cakes? If so, how do you like them?

    I've never had a flourless cake except during Passover when flour is prohibited. I've never made one, and I thought they were just okay... but I'm seeing some recipes that look really good. I think if I can't find anything Peruvian, I'll do a flourless cake.
