Thread: Lentil Salad

    Thumbs up Lentil Salad

    I made this and it's so good!

    This morning after going to the gym, I put some lentils on to boil while I ate breakfast. I cooked one pound of lentils (rinsed) with six cups of water and two cups of vegetable broth, and boiled them for 15 minutes, then drained them and put them in the fridge. Then I heated some olive oil in a skillet, and toasted a ton of pine nuts and garlic over medium heat, and stirred them into the lentils. Once cooled, I stirred in a chopped cucumber, a container of Mediterranean-herbed feta cheese, some cayenne pepper and basil, and half a bottle of balsamic vinaigrette. I mixed that all up in the fridge.

    It made so much I think it will be lunch for the whole week, and it's really good! It's really quick and simple, but tastes like something elaborate. And the ingredients are all really cheap (well, except the pine nuts unless you get them at a good deal at the farmer's market like I did).

    I love lentils! I eat them at least 4 times a week. I'll have to try this.

    I eat lots of beans because I rarely eat meat and never red meat.

    I'm eating it right now... seriously, the pine nuts are the best part.

    mmm... I love lentils too... I just soak them overnight and sprinkle a little salt after draining and mixing! I have been trying to find adzuki and mung beans... as well as quinoa lately... as these may be prepared with the same method... but to avail!
