    Default How to: Pick and Cook Salmon

    Ok, I do pretty well with cooking most things, but fish scares the crap outa me. I really want to cook salmon (healthy recipes preferably) because dammit I need variety in my diet before I order another cheesy bites pizza

    So, how do you go about picking out good salmon in the store? What should I be wary of? And how the hell do I cook it? Lol. The easier the recipe, the better, as I'm lazy. Thanks!

    well, it should be pink and firm...I prefer the wild caught Alaskan sockeye over the farmed. I always get the fillets instead of the steaks because the steaks have alot more bones in them (the fillets typically have none but one should still be wary)

    Heat a frying pan up to pretty damn hot
    Add splash (1 tsp or so) of olive oil
    place salmon in pan pink side down
    sear till you get a nice brown crust (minute or 2)
    use spatula to put fish in baking dish (I do it skin side down) and bake at 350 till it's done.

    that's just basic...feel free to add whatever seasonings you like. Experimentation is great!

    Oh and salmon is GREAT on the grill. I see you're in Utah so you're probably not grilling anytime soon but salmon grilled on a cedar plank (that's been soaked in water) is FRIGGIN DELICIOUS!!!!!!!!!!! (and soooo easy!)

    eta: I love using leftover salmon the next day for a fancy eggs benedict. Also, it's so yummy over a green salad.

    I get mine from a seafood store and they just pick it for me, I also go for the fillets.

    Fish was the only type of meat I could eat during my detox, and because it was a detox I had to cook it really healthily, so I would cook it in a bamboo steamer. I would slice up ginger and put it on top and underneath the fillet. I would squeeze lemon juice over it and also place slices of lemon in with it, I also have one of those sea salt grinders with a spice mix in it, and I grind some of that on top. I'd wrap it in foil and then pop it in the steamer. Depending on the portion size it'd cook in about 5-8 minutes...but it's not a big deal, it's better to undercook fish than to overcook it. Undercooking it isn't bad for you like with chicken, just remember, sushi is raw!

    Make sure it's labelled 'wild'. Just because it's a nice pink doesn't mean it's good...I don't know if the practice has been banned in the US (it has been up here), but suppliers used to dye farmed salmon to make it a nice wild-looking dark pink.

    The easiest cut to cook is salmon steaks.

    I'm such a whore for salmon...I LOVE it. loveitloveitloveit.

    It's hard to mess up, really. Everything tastes good with/on it. The poster above has it- the easiest way to do it is wrap it in foil, and it's much better to undercook than to overcook.

    I don't have a steamer, can I cook it in foil in the oven? If so, for how long, and what temp? Is there something good to cook in the foil with it to give it flavor?

    I love salmon too Scarlett, unfortunately, it's the one thing I never learned anything about cooking. My mom used to make it with this killer butter sauce *drools*

    i wrap my steak in foil with butter and lemon & toss it on the grill. and definitely get wild caught. farm raised salmon live in horrid conditions.

    Oh god I love salmon.....
    I just make a foil pouch, put the piece of salmon in with lots of fresh lemon juice, a few slices of lemon, and lemon pepper seasoning and/or Old Bay seafood seasoning, fold up the pouch, and bake it at 350 for like 45 minutes. It won't get dried out because the lemon juice creates steam in there.

    To pick, make sure the meat is firm and bright...if it looks dull and is flaking apart...pass. You can also judge by smell...any strong fish or ammonia smell..pass!

    One of my favorite recipies, mix chopped tomatoes, shallots, garlic, fresh lemon juice, oregano, and thyme with a bit of olive oil. Salt and pepper the salmon, place on foil, spoon tomatoe mixture over fish, make a packet with the foil, bake in the oven at 400 degrees for about 25 min.

    ^Exactly. Fresh fish should not be fishy!

    And no, dying fish has not been banned here. It's very common and the packages do not need to be marked as dyed. There's usually a small sign on the wall where they sell fish in the grocery store, but that's it.

    Oooh that sounds good. Are shallots just green onions? I've always wondered that...

    ^no, shallots look like huge cloves of garlic but they have a delicate onion flavor.

    I prefer going to fish markets. I never buy fish from grocery stores, unless theyre high-end. At fish markets, the freshness is more garunteed because it moves fast. In groceries, fish doesnt sell as quickly.

    For some reason, I was convinced that Guenevere was grilling salmon on her forearm. Oh, to learn how to read.
    But I usually use a recipe along these lines:

    Grilled salmon is amazing! Good luck!
    But yeah, remember that color should not be a determining factor. Tasty undyed farm-raised salmon can be quite pale, while rather lackluster salmon can be dyed a bright pink.

    I like to sear it w/ black pepper & herbs.

    I also like to poach it.

    Get a casserole dish, rub a little olive oil or butter on the bottom, then fill the dish a little more than halfway ---almost covering the salmon. Don't forget to season! I like a little salt, black pepper, and a bay leaf. It should cook in 20 mins.

    I love it.

    I put butter, garlic, salt and pepper, lemon juice and sprigs of fresh dill on my salmon steaks before putting them on the george forearm.. so very tasty
