    Default Yep.. There Goes My Sanity

    So, today is scheduled to be Dan's favorite dish that I make---Braciole. He gets home and I get to prepping it up. Got all the stuffing cooked and mixed (homemade bread crumbs, spinach, proscuitto, chopped red pepper, garlic, onion, etc..), ready to go into the nice, thawed flank steak, rolled up and tied. I stuff it, tie it, brown it on all sides in the frying pan. I get it in the baking dish with the nice white wine and homemade sauce, and cover it with foil as always. I pop it in the oven and set the timer for 1 hour.

    I then go to clean the kitchen up and do other various stuff around the house.

    The hour rolls around, and the timer goes off....

    Still with me? Good. Can ya figure out what I FORGOT to do?

    Yep. I forgot to.. TURN THE FREAKIN OVEN ON!

    ::slaps forehead::

    So here it is, nearly 9:00 PM, and we're about to finally eat my nice dinner.

    If anyone has seen my sanity floating around, kindly stuff it in an envelope and return it to me. Thanks.

    I think that envelope is still floating around somewhere near Graceland. Return to sender...address unknown... no such number... Your still young enough, maybe your sanity will return. Otherwise looks like a lot of late night meals in your family's future.

    my god that sounds friggin delicious! You're a busy girl, doll. I sometimes do absentminded things like that as well. Once I put the ice cream in the fridge and another time I *caught* myself putting the milk away in the cabinet.

    My two stories that ALWAYS make people feel better:

    I was driving down the road before I panicked and turned and started to go home - because I forgot my car keys. Think about that.

    Once I was wrapping christmas presents and couldn't find the tape. I looked EVERYWHERE. Finally I went online and Googled the word 'tape'... that said, the Internet did not find my tape. Apparently looking for something in my house doesn't mean google can find it.

    hahaha one time i got in my car and freaked out because i couldnt find my keys.. my friend in the passenger seat looked at me like i was insane because i had just put them in the ignition.

    I forgot to close the car door when I was backing out and the door hit the side of the horse trailer and the door fell off.

    On another note..that dish sounds awesome, I ve never heard of it, can I have the recipe?

    Thanks everyone.. I still can't believe my absent-mindedness.. LOL
    Dan didn't care much, he still gobbled it all up at 9. Heh

    Lilith.. WHA? LOL.. You got me totally confused with the leaving the keys at home, yet you were driving? It makes my brain hurt to think of what happened there.

    Kaylinn... The recipe is below for you (and anyone else who wants to try it out). You'll need about 2 hours from start to finish, but I assure you it's worth it. It's a good Sunday dish when you're home relaxing and have the time to cook. The only thing I can't include is my Gravy recipe. It's my Grandmother's, and only I have it. You can whip one up of your own, or just use a store-bought sauce and jazz it up a bit.

    Braciole

    Ingredients:

    *Flank Steak
    *Olive Oil
    *Dry White Wine
    *Spinach
    *1 Red Bell Pepper
    *Fresh Garlic (About 4 Good-Sized Cloves)
    *1 Small Onion
    *Italian Bread (A few days old, kind-of-stale is best)
    *Prosciutto (Italian Ham.. Ask at the meat department or deli. You don't need much, maybe 1/4 pound)
    *Pecorino Romano Cheese
    *Coarse Salt
    *Black Pepper
    *Butcher's String (Buy this in bulk if you cook like I do! You can get it at any kitchen supply store. Or, if you're in tight with your butcher, they can hook you up like they do me.)
    *Gravy (Pasta Sauce) ~ Either store-bought or make one of your own.

    *Preheat your oven to 350 degrees.

    *Cook spinach for 8 minutes in the microwave. When it's finished, drain excess and roll in a clean kitchen towel. Set aside.

    *Chop Garlic and Onion finely. Take about 1/2 of the Red Bell Pepper and chop that finely. Set aside the rest of it, you'll need it to cut into strips for garnish.

    *Slice the Prosciutto. You can either slice it into little pieces, or cut it into ribbons. I do the ribbons.

    *Cut the bread into cubes. Then, dump it into the food processor. Use the "Grate" setting. You can add some salt & pepper as well, if you'd like.

    *Heat 2 Tablespoons of Olive Oil in a fairly large skillet. When it's nice and hot, add the garlic. Cook for about a minute, be careful not to let it burn or you'll have some bitterness going on. Add the Onion and the Bell Pepper. Cook for about another 2-3 minutes on medium heat. Add some Salt & Pepper.

    *Add Spinach, mix well.

    *Add Bread Crumbs, and about 1/2 cup of the Pecorino Romano cheese. Mix thoroughly.

    *Turn off heat and set the mixture aside.

    *Rub Olive Oil on both sides of steak. Salt & Pepper each side as well.

    *Spoon cooked mixture over steak. Take the smallest side of the steak, and roll the steak up. Try and do this as carefully as you can, because the stuffing has a habit of falling out. You can stuff it back in of course, but it can get a bit messy.

    *Take the Butcher's String and tie 2 sides and the middle. This keeps it from falling apart, of course.

    *Heat 2 Tablespoons of Olive Oil in another skillet. When it's nice and hot, add the Braciole. Cook about 2 minutes on each side (for a total of 8 minutes) over medium-high heat. Remove from heat.

    *Add Braciole to an oven-safe baking dish. It'll need to be fairly deep.

    *Add your Gravy, and about 1 1/2 cups of Dry White Wine. Cover dish loosely with aluminum foil, and cook in the oven for an hour.

    *After the hour is up, uncover the dish and continue cooking for another 15-30 minutes.

    *When cooking is done, Let the dish sit for about 5 minutes. It should be cooled a bit before you slice it. Then, cut it into nice slices, garnish with Red Pepper Slices, and serve with your favorite side dish. Pasta is a great side dish, or even buttery oven-baked seasoned potatoes. I'll post my potato recipe, which is really really simple.

    Did you end up having to make something else to eat?
    One time I was doing laundry and when I went to get the clothes out of the washer to put in the dryer, I realized that I had never put the clothes in there in the first place! I just put soap in the washer and let it wash with nothing in it. The clothes were sitting in a basket still.

    Well, for lunch this afternoon, Makayla asked for Macaroni and Cheese with chicken strips. Easy, right?

    Yeah, right. I put the noodles in the pan, turned on the stove (beat you on that Rhi, LOL). Went into the other room to check on Adrian (who was sleeping very peacefully). Makayla came into the living room and wanted me to read to her while we waited for her lunch. Since we had a busy morning, she passed out cold in the chair...so I put her on the couch to sleep, grabbed Adrian who had woken up and began to nurse him. When, all of the sudden the smoke alarm goes off.

    *sigh*

    My house smells like burnt macaroni noodles. And it's too cold to open the windows to air it out.

    Oh, well. Business as usual. bwahahahahahaha

    Rhi, don't feel bad...we all do this. In fact, Joe eating dinner at 9-10pm is almost normal these days. LOL

    Oh no no.. I cooked that sucker for sure, and we ate around 9.. LOL There was no way I was going to cook something else after prepping it all up.

    Damn, VG.. LOL.. I hear ya about opening the windows too. When I made my Rosettes around Xmastime, the old apartment was TERRIBLE! There was smoke everywhere, and I would NOT let Dan open the windows because it was way too cold. So we just turned on every ceiling fan in the place and dealt with it. Heh

    thats okay I do something so dumb on a reglar basis it makes all you blunders look like nothing. I always forget to close the kitchen cabinates and I don't rember till i hit my head off of them i do this most every week.
