    Fish

What's your fav. kind of fish to cook at home?

I don't like home made Salmon, for some reason. It has to be made really good. But i'm also sick of it already anyway.

I made whiting fried in olive oil. Red snapper isn't bad either. Haven't cooked a tuna steak yet.

I like to cook tuna, b/c it's a strong flavor and it pairs well with a lot.

talapia is mild, and it's nice baked, espically for people who don't love fish

the higher the quality you can find (and it should be great in nyc) the better it will turn out. ask your fish guy what's best today, and ask for prep advice

Hmm. Thanks for the tip Lola

You know, i'm not even crazy about fish. But since it has good fats(and i'm also getting sick of red meat and chicken), I force myself to eat it. Heck, I think I might be turning into a vegeterian since i'm getting tired of eating meat all together.

Talapia sounds good for me, i'm gonna have to try that!

Tilapia is easy to cook, and it's so mild you can do all kinds of different stuff to it. I've even breaded it and made "tilapia parmesan" - just like eggplant or chicken parmesan, but with fish. It's good that way but it's also good with just a little butter and lemon pepper. It's the most versatile of the fishes!

I wish I could cook fish. I've tried, but even the simplest recipies followed to the T somehow get screwed up in my kitchen....sigh....

    Sushi. No really!

I love cooking fish in a method called "en papillote". It sounds fancy but it's actually really easy, and keeps fish really moist and flavorful.

All you do is lay the fish on a sheet of aluminum foil, turn the edges up slightly to give it a bit of a bowl shape, then add a teaspoon of water, whatever seasonings you want to put on it, and maybe a little butter or olive oil. Then you fold the aluminum foil into a loose packet around the fish. You don't want to seal it too tight so that the steam can evaporate while you bake it.

Tilapia's one of my favorites to make this way (it really IS easy to cook, isn't it? And you can buy a big 'ol bag at Costco for pretty cheap) and so is cod and halibut.

Ok..I've tried to cook tilapia that way and it came out dry and rubbery...I cooked it for the amount of time the recipie said at the temp it called for..what the hell did i do wrong???? ( i seasoned it with lemon and lime juice and a bit of garlic powder and pepper)

Basa or halibut or wild salmon. Coat with a mixture of corn meal, salt, pepper, and dried tarragon. Pan fry in coconut or canola oil. Serve with tartar sauce.

Oh, I LOVE me some sushi which is raw. I'm crazy over that than cooked fish, go figure.

Ok shrimp lovers, since we're on the seafood topic. I have an awesome easy recipe for shrimp. You'll love it and suck your fingers dry. Here it goes...

1)Boil the shrimp. After boiling it, squeeze lemon over it. Set that aside.

2)On a pan heat the olive oil with a bit of butter(if you're dieting then, you don't have to throw in the butter. it'll taste just as good). Then throw in chopped green and red peppers, onions, and minced garlic. Cook it until it turns into a reddish color.

3)Then throw in the shrimp. Salt it a bit(if you're on a low sodium diet, it'll taste just as good w/o the salt...but I love salt). Take a teaspoon of coconutt milk and throw it in there. It's going to give it a hint of coconut but not much.

4)Chop up some parsley and chives and throw it in there, it's going to be the last thing you're going to cook.

    And viola, done. Enjoy

BTW, this would be good if it's accompanied by a piece of steak.

I generally don't cook fish at home (unless it's frozen and microwaveable), basically because I'm both lazy and crap at it. But sushi, sashimi and smoked salmon (from the supermarket) are all takeaway favourites of mine. I also like getting grilled scallops or calamari to go.

Orange Roughy is my absolute most favorite mild fish. Tilapia has been touted as the "new orange roughy." I like to bake it as ND described with a tad of olive oil, salt, pepper, lemon.

Leftover homecooked salmon tastes so devine the next morning when paired with eggs over medium and bernaise sauce. mmmmmm mmmmmm good.

    I could eat sushi everyday!!!

But my overall fave fish is salmon. I love me some salmon! MMMmmmmmm
My fave way to cook it is to make a pocket with aluminum foil and stick whatever seasonings I feel like in there with the fish. I seal it up to keep the steam in. For an 8oz piece of fish, about 15-20 minutes in the oven gets it done while keeping it moist. I'll start checking it at 15 mins or so, just open the packet enough to stick a knife in and poke the fish to see inside. Careful with the escaping steam when opening the packet!!!

Mmm. Think I'm gonna have to find some sushi today!
