If you're craving Chinese food, you could whip up a stir-fry. They're actually pretty cheap and healthy when you make them yourself, and it'll probably satisfy your craving just as well as the takeout joint. I'm doing a lot of this lately since I'm trying to lose weight... I'm not gonna lie, I want some fucking General Tso, but a homemade stir-fry is almost as good!

Stir-fry is seriously the EASIEST thing in the world to make. It takes longer to prep than cook, and requires nothing beyond the most basic culinary skills. I was making stir-fries by age 12, so you can pick it up quickly!

Chop whatever veggies into bite-sized pieces. Good stir-fry veggies include cabbage, carrots, celery, bok choy, bean sprouts, squash, and mushrooms, but seriously almost any vegetable is good. Fresh is better than frozen because frozen veggies have too much water.

Set aside your chopped veg and chop some garlic. Or if you're one of those who keeps your garlic in a jar, just have that handy. If you use (*shudder*) powdered garlic, ignore this step and stand by. Oh, ginger is a good thing to have around for a stir-fry too.

If you want meat, cut it up. Chinese cooking includes the concept that you should never have to cut food at the table, which is why everything is in bite-sized pieces. Chicken or steak is what I use, but I hear pork works well too. Tofu requires some semi-advanced cooking skills so let's just go with either plain veggies or meat for now.

So everything is cut up. Now get a big skillet and pour in a couple tablespoons of oil (preferably sesame oil or olive oil). Give it a minute to heat over medium-high, and add your garlic (unless it's powder). Saute the garlic for a minute and then add your meat. Once the meat is about halfway cooked, add the veg. Just keep stirring it around with a fork until everything is cooked, and voila. Stir-fry. If you're using garlic powder, add it now that everything's done.

If a plain stir-fry isn't tasty enough, you can add a sauce a minute or two after adding the veggies. I like to mix soy sauce, teriyaki sauce, honey, lemon or lime juice, and a heavy squirt of Sriracha. Add a bit of hot water to this, mix it up with a fork, and pour it over. If you like a thicker sauce, then use lukewarm water and add about half a teaspoon of cornstarch or potato starch and give it a minute to simmer with the veggies.

If you want to go all out, put some rice on to cook when you first start and then pour your stir-fry over the rice. It's seriously just as good as a stir-fry you'd get from takeout, and much healthier and cheaper too.

^^^ Ha ha, do you ever mix the two? I cook Italian, Chinese, and Southern most often, and I mix them up all the time... like I'll use Italian herbs and ravioli wrappers to make Chinese dumplings in sesame, or I'll put soy sauce and Sriracha in my fried-chicken batter. Woohoo for the melting pot.
