    Default Easy, healthy college diet??

    Hello!
    So I got into nursing school and I start in the fall. I don't want my diet to suffer, and I need to save money on food. Any ideas of things that are:
    -relatively fresh and nutritious, not fast food
    -quick and EASY to make
    -inexpensive.

    The one idea I have is hardboiled eggs for breakfast.

    Also keep in mind I am not a very talented cook. I'm not sure I even remember how long to cook hardboiled eggs. My specialty is Kraft mac and cheese

    Any other ideas? Besides top ramen and peanut butter jelly sandwiches...

    Get the south Beach Quick & Easy cookbook from the library. There is a whole chapter about how to make simple dishes, that are so easy they have no recipe.

    Also, stock up on whole grain pasta and sauce, instant brown rice, low-fat cheese, cottage cheese, yogurt, whole-grain bread (as long as you are going the PBJ route), bag salads, and soup mix.

    Invest in a small crock pot. You can make lots of things in there that take a few minutes to throw together in the morning, and will be hot and waiting for you when you get home. There will probably be enough for leftovers.

    Smoothies for breakfast. And whole-grain or bran cereal.

    Fruits and veggies in season. Local farmers markets should be opening up soon.

    Watch for good deals on produce that is easy to freeze. Jewel and Domincks frequently have blueberries for like a dollar a pound during the summer season. All you have to do to them is rinse them and stick then in a freezer bag, save for later. Same for green beans, baby carrots, and a few other things I can name.

    I've been making curried vegetables a lot recently.

    All you need is a good curry powder blend from your local Indian store (way cheaper than American markets), some chili powder (NOT the lawry's sloppy joe kind), garlic, olive oil, onions, potatoes, canned peas and whatever the fuck else you wanna throw in.

    Plus you can make a bunch at a time and reheat it later. It's best with sour cream or plain yogurt.

    How to make "homestyle" curry:
    1. Wash potatoes. Then cut them up into medium-small chunks, and set to boil until REALLY SOFT
    2. Chop garlic to taste (I like 2 cloves), eggplant, onion, carrot, and/or cauliflour
    *3. Defrost and chop chicken if you have the funds or desire to add chicken
    --------You can also use ground beef, or beef stew chunks, or lamb (not cheap)
    4. Heat a small amount of oil in a pan. Blend curry powder and chili powder in the oil to taste (you can add more spice later)
    *5. Brown ground beef/sautee chicken
    6. Add garlic and onions
    7. Mix in drained potatoes. Coat everything with curry mixture
    8. Add all other vegetables, including canned peas if desired.
    9. Stir and cook until everythings nice and mushy and coated, and sprinkle more spice on top and keep stirring if desired.

    10. Serve over long-grain rice, with some yogurt or sour cream on top and you have a yummy vegetable curry!

    Get a George foreman grill. Seriously, they make cooking basically everything a breeze and all you need is a standard wall outlet.

    When I started college, I was so poor and could only afford Ramen noodles... they got old fast, and then I got skinny bc I was too picky to keep eating them... but if you like to eat, perhaps one of the other posts would be more appealing..lol

    Oh yeah, instead of shopping at the big supermarkets, I like to go to small ethnic/family run type grocers. At my local asian grocers I can literally get 2 large bags of veggies and cheap spices for like, 10$. Plus, they have more exotic type foods coming in that can keep things interesting.

    Farmer's markets are also good and can be fun to go to.

    My diet of lately is basically just rye toast, with banana mashed on top, cinnamon, squeeze of honey, and almonds. Seriously I eat it like 3 times a day. I'm too lazy to walk down to the good supermarket now, my campus is nowhere near any grocery stores, and since I started my new antidepressants I'm just not interested in food and this is the only thing I can even imagine eating.

    Lol my trainer said that seeing as the thought of eating turns me off and this is the only thing that I'm willing to eat, it's still pretty healthy...he attempts to add more variety but he said this will do...hehe.

    1.Shredded Mini Wheats make a good chip/munchie/dipping tool. It's a "good" carb too, lots of dietary fiber. And hummus or baba ghanoush (sp.?) rocks for a dip. I swear I eat this stuff by the tubs. Cedars and Tribe are 2 good brands which are low fat, but high protein, and high dietary fiber also. If you have a Food Lion or Bloom near you, you can get a big tub for 2.49 (instead of the usual $5).

    2. Garbonzo beans/chick peas: I stock up on cans of these for about 60 cents each and eat them by themselves (cold or hot, either way they're good), or on top of salads. They fill me up like a carb would but higher in protein.

    3. Bananas - usually one of the cheapest fruits you can get and more filling.

    4. Apples/Oranges - another cheaper fruit, good for on the go or if rushing to class.

    caramel rice cakes are really good, soup, apples..oh those tuna packets are only a dollar with crackers..the lemon pepper one is good.

    Lean Cuisines are usually 5 for $10 at local supermarkets... so you'd only spend around $30 a week if you ate one for lunch, and one for dinner. They're yummy, but I don't think I could stand eating them that much... but it's a thought.

    I'm in nursing school too! I'm about to go in to see if I qualify for food stamps. Other college students have done it, and I'm not ashamed.

    I get a quart of salsa, mix extra black beans in it, and pour it over microwaved generic reduced fat triscuits with shredded cheddar.

    I make my own hummus in a food processer with chickpeas, lemon, garlic, olive oil, tahini, and whatever spices I feel like.

    I also live on an instant Japanese food called ochazuke. It's a powdered green tex mix with seaweed, crackers, etc that you put on rice and pour hot water over it. You might be able to find it at a local Asiamart. I use brown rice for extra nutrition.

    Dried fruit is awesome!

    I live on cereal, like the generic granola, and mix it with dried cranberries.

    I always bring a can of soup and a bag of low-fat microwave popcorn to class in case hunger strikes.

    Yesterday, I bought 5 cans of low fat vegetarian chili for a buck each.

    Canned tuna. I've actually taken a liking to a can of tuna and about a teaspoon of Sriracha, no mayo added. Mix it up and it's kind of like eating spicy tuna sushi.

    Hmm, now y'all got me thinking how to make my own sushi (minus the white rice though). I love me some sushi.
    Maybe if I mixed up some chick peas with the Shredded mini wheats to sub for the rice.
    But that could be a good idea for you too. If you like rice, cook some up in a steamer (so it will stick together), then wrap it in a seaweed (I think it's supposed to have a lot of nutrients). Then top it with some tuna from a can, pieces of chicken, or whatever else you want to put on top of it. Stick it in the fridge and voila. In a hurry and late for class? Just pile some in a tupperware bowl and you're good to go.

    I'm a very big believer in portion control instead of being obsessed about what you eat. Seriously. Getting in touch with your body and eating til you are full (not stuffed, which most people do) is the best lesson one can learn.

    When you buy a pack of chicken, put each piece in a spearate Ziploc baggie, and freeze. You can use as few or as many as you want.
