Yeah, fresh veggies are supposed to be much better for you. But I'm not sure the measure of the differences.
But cooking takes nutrients out of veggies, too. Some stuff is much healthier (well, nutritious anyways) raw.
Frozen veggies apparently have a higher nutrient content than fresh ones because theyre picked and frozen almost immeadiatly. Fresh veggies spend hours / days/ weeks in transit and then being stored and shelved so they loose alot of quality.
However thats just a rough guide, there are some exceptions to the rule apparently.
Cooking destroys alot of nutrient content too though. Steaming for a couple of minutes is way better than boiling veggies regardless of whether theyre fresh or frozen. My personal opinion is that raw is best anyway.
Im still a fan of fresh veggies though, even if they arent totally fresh! Something about frozen veg just seems wrong to me although im not sure why yet...





Yeah its messed up - I still like to think that fresh is best but unless you can eat fresh fruit and veg soon after its picked it probably isnt.
Alot of "fresh" stuff doesnt even reach maturity before its picked meaning that crops dont reach the full nutrient potential and then they start loosing what they have as soon as theyre picked. Stupid, stupid world!
This thread actually makes me feel a little better. I've been making lots of stir fry lately, but fresh veggies just aren't practical for me most of the time, as they go bad before I eat them. So I buy lots of canned/frozen. Glad to know there's some nutritional value in them still.

I think it's actually the microwave that deplete nutrients..
PLUS when cooking veggies in water, the water tends to take on the nutrients so either drink the water or use ALOT less.. That's why steaming is considered so great, it keeps the nutrients in.

Frozen is generally better, as is steaming. "Fresh" veggies have been picked before they are fully ripe, irradiated, packaged, and shipped to grocery stores, where they sit under fluorescent lights (which destroy even more vitamins) and wait for you to pick them up. Or you can get frozen veggies tat are picked at the height of ripeness, flash-frozen and packaged in opaque bags designed to keep out vitamin-destroying light. Your choice.
