K's birthday is tomorrow, and he likes ice cream cake so I decided to make him one. He actually requested the yellow cake from boxed mix (*sigh*) but I couldn't resist dressing it up. I made the damn cake mix, added vanilla and used melted butter instead of oil, and baked it into two 8" rounds. Once they were cooled, I covered one round with an entire pint of softened Haagen-Dasz Cherry Vanilla ice cream and stuck it back in the freezer to harden before adding the other layer on top.
But then this frosting... wow, this frosting. I found it on AllRecipes.com and even the glowing reviews didn't prepare me for how good it was. With my own little adaptations, here's the frosting:
1 cup Dove dark chocolate, broken into pieces
4 Tbsp butter
1/2 cup sour cream (yes, really)
1/4 tsp salt
Splash of vanilla
Splash of whiskey
2 1/2 cups confectioners' sugar
Melt the chocolate and butter together in the microwave, zapping for 20-second intervals and stirring in between. Stir a little to cool, then add sour cream, salt, vanilla, and whiskey. Blend thoroughly. Add confectioners' sugar about a half-cup at a time, blending until frosting consistency.
This is chocolatey, rich, tangy, and just fucking incredible. It's gonna go so well with the ice-cream cake. I can't wait to serve K his birthday cake tomorrow!
Fuck, I love cooking. I've been in the kitchen all damn day on this cake, tonight's dinner, and tomorrow's breakfast (blueberry-strawberry French toast with turkey sausage and fresh-squeezed OJ). I know I'm a feminist and all, but I LOVE spending the whole day in the kitchen.
Anyway, y'all have gotta try this frosting!!
