    Default That Tastes sooo good, whats in it?

    Paris' quote got me thinking how much I love to cook on the weekends, So why not have a thread to share your best recipie for something. Its ok I won' t tell grandma you gave us her top secret cookie recipie!


    So I present you with my Best Chili :

    • 1/2 pound bacon
    • 1 pound ground round
    • 1 pound ground pork
    • 1 green bell pepper, diced
    • 1 yellow onion, diced
    • 3 jalapeno peppers, seeded and chopped
    • 3 habanero peppers, seeded and chopped
    • 3 Anaheim peppers, seeded and diced
    • 2 cloves garlic, minced
    • 1 1/2 tablespoons ground cumin
    • 1 tablespoon crushed red pepper flakes
    • 3 tablespoons chili powder
    • 2 tablespoons beef bouillon granules
    • 1 (28 ounce) can crushed tomatoes
    • 2 (16 ounce) cans whole peeled tomatoes, drained
    • 2 (16 ounce) cans chili beans, drained
    • 1 (12 fluid ounce) can beer
    • 3 ounces tomato paste
    • 1 ounce chile paste
    • 2 cups water

    1. Place bacon in a large soup pot. Cook over medium high heat until evenly brown. Drain excess grease, leaving enough to coat bottom of pot Remove bacon, drain on paper towels and chop.
    2. Brown beef and pork in pot over medium high heat. When meat is browned, stir in the bell pepper, onion, jalapeno peppers, habanero peppers, Anaheim peppers, garlic, cumin, red pepper flakes, chili powder, bouillon, crushed tomatoes, whole tomatoes, beer, tomato paste, chile paste and water.
    3. Reduce heat to low and simmer for 45 to 60 minutes, stirring occasionally. Add beans and bacon and continue simmering for another 30 minutes.
    I like corn bread with my chili, so I make a corn bread batter and cook it in my Belgum waffle maker. I serve the chilie over a 1/4 of a corn-bread waffle

    Oooh sounds good. Bf won't eat pork though (he'll eat the bacon though, go figure ) What would be a good substitute for the ground pork?

    ^^^ Ground beef or turkey. You could also use turkey bacon instead of pork.

    No worries! And that does sound like an effing wonderful chili.

    Our favorite snack around here is black bean and corn dip. I vary it up whenever I make it, but here's the general idea... sometimes I leave out the steak, sometimes I leave out the green onions, whatever. It's pretty flexible. I've also never actually measured the ingredients; I just eyeball it, so adjust it if you want until it looks right. Just remember you have to let it marinate for at least a day and preferably overnight - it'll be hard to avoid diving in, but it's really much better if you let it sit for awhile!

    2 cans corn, drained
    2 cans black beans, drained and rinsed
    1/2 cup olive oil
    1 1/2 cup balsamic vinegar (yep, that much)
    1 Tbsp chili powder
    3 Tbsp cumin
    1 steak
    Chopped fresh garlic to taste
    Green onions, sliced

    In a medium bowl, mix olive oil, balsamic vinegar, chili powder, and cumin. Whisk together with a fork until blended and set aside. Sprinkle the steak with garlic and a little balsamic vinegar and cook to desired degree of doneness (you can grill it, broil it, whatever). Slice the steak into very tiny pieces and add to the corn and beans. Add the dressing and mix it all up. Let it sit in the fridge for at least a day, checking it after a few hours to see if it needs more vinegar or cumin. Just before serving, add the green onions. Serve with tortilla chips. This goes great with sangria or margaritas and a movie!

    I love to cook when I have the kitchen to myself without the kids in hte back killing each otehr so my damn rice burns so when I do have a time to really pay attention will try the recipe

    Chicken Monroe (named so because Monroe was the name of my ex's band and he taught me to make this dish).

    Boneless Chicken Breasts
    Cream Cheese, softened (not the whipped kind)
    Bacon (I use Turkey Bacon)
    Assorted spices (I use garlic powder, onion powder and paprika)

    Preheat oven to 350 degrees.

    Pound out chicken breasts, but not too thin. Just make them uniform and not too thick.

    Spread cream cheese on breast, sprinkle with your favorite spices. Roll up chicken and wrap with bacon. Place on rack in baking pan and cook until chicken is no longer pink (usually 20 minutes, depending on thickness)

    I like to turn it over after 10 minutes so bacon cooks evenly.

    When you cut into these, the cheese is molten and it coats the piece of chicken you have on your fork. Yumm!!

    ^^^That sounds good Jade! There are so many ways to do chicken after you've browned it.

    I like to deglaze mine with white wine and thicken it with a little cornstarch. We do the same thing, spoon it over chicken and rice.

    I won fourth place at the Weber County Fair Chili Cookoff with this recipe:

    4 pounds beef (I use sirloin steak for competition)
    1 small yellow onion, chopped
    2 - 16 oz cans red kidney beans, drained
    1 - 8 oz can tomato sauce
    1 can stewed tomatoes
    8 oz dark molasses (more as desired)
    3 tablespoons chili powder
    1/8 teaspoon cayenne
    1/8 teaspoon black pepper
    1 teaspoon garlic salt
    6 cans beer (or thereabouts)

    Put beef and onions in cast iron skillet over hot coals. Brown and drain off fat. Add remaining ingredients except only 1 tablespoon molasses and 1 can beer. Simmer for one hour or more. Add more molasses after about one half hour. As chili thickens, add beer. Add as much beer as you like, with the last beer added at least ten minutes before serving. The cook may be flavored to taste with the remaining beer, if any.

    Serve with grated cheese and chopped green onions with cornbread cooked in a cast iron skillet over charcoal.

    Kaylinn's Yummy Chicken:
    ( created by myself, no exact measurments, so use yoru own judgement)

    2 Boneless, skinless chicken breasts.
    Flour
    Marsala Wine
    Mushrooms
    Cheese( my bf loves Swiss, sometimes I use provalone or mozerella)
    Spice( poultry season,rosmary, garlic, whatever else you wanna throw in)

    Season Chicken with salt, pepper, and garlic, and poulrty season.
    Dredge chicken in Flour
    Heat some olive oil in a skillet over med. heat. Add chicken breast fry each side for about 5 min. Depending on thickness. ( just until they have a nice color. Do not cook through yet!!)
    Remove chicken, put on plate and cover to keep warm.
    Add Marsala wine, deglaze pan. ( scrape up the bits of chicken stuck to bottom of pan. How much win you use is really up to you. My bf doesn't like a lot of sauce, so I dont use to much, but if you want a sauce, use a littl emore, but I use abotu 1/4 cup.
    Add mushrooms, and onions if you want. Saute 5 min.

    This last step is important.
    Return the chicken breast the the pan. Put the slices of cheese on top, and cover the pan with a lid. Cook for 2-2 1/2 minutes, with the lid on. DO not remove lid!
    Turn off heat. Keep the lid on!
    Let the chicken sit on stove for 10 minutes.
    Serve.

    Letting the chicken finish cooking this way will give you the juciest chicken ever, as it doesn;'t dry out, and kind of steams to cook....

    Fat Soup:
    1 potato, peeled and cut into chunks
    full fat milk
    Velveeta cheese
    Flour
    2 eggs
    1 tbsp butter

    Put potatoes in water just to cover, and boil.
    While that is cooking, make dumplings
    2 eggs, a splash of milk, and enough flour until you get a very moist, soft dough.
    Add butter to the potatoes, salt, pepper, and milk.( you don't drin them, just add this in with the water. How much milk? A lot. like, 1/4 gallon. I dunno....till you have a big broth.
    Add Velveeta cheese. If your using slices, it's like, 6 slices. Just taste it until its cheesy enough.

    Drop in dumplings by the spoon. Make them small! They will expand and get big!

    Turn the heat way, way down.
    Soup is done when dumplings get big and rise. Do not overcook! the potaotes will get mushy. You need to taste it, add more cheese if nesessary.

    This soup is wonderful. It sounds nasty, looks even nastier, and it taste out of this world. The ultimate comfort food. It's called fat soup for a reason, so eat sparingly.

    Best ever soft chocolate chip cookies. Not my own recipe, but damn, these are good!

    INGREDIENTS
    4 1/2 cups all-purpose flour
    2 teaspoons baking soda
    2 cups butter, softened
    1 1/2 cups packed brown sugar
    1/2 cup white sugar
    2 (3.4 ounce) packages instant vanilla pudding mix
    4 eggs
    2 teaspoons vanilla extract
    4 cups semisweet chocolate chips
    2 cups chopped walnuts (optional)
    DIRECTIONS
    Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
    In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
    Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

    How I make Filet Mignon

    Put a little olive oil in a skillet, add mushrooms, use a little garlic A1 sauce. Cook until mushrooms are done. Salt and pepper a little. Remove mushrooms.
    Season steak with Garlic, onion, and whatever else. Add steak in pan. A little more Garlic A1, and more oil if nesessary. Brown on one side, flip, brown on the other.
    Turn heat to medium, and cook until however done you like it.
    Last minute, add mushrooms back in. Serve.

    My bf loves the way I make his Filet. Ive never had one, and I dont know any other way to make it, I just did it this way, and he says its awesome steak. He loves the flavor the garlic A1 gives it. SO if anyone has a better way for my to make steak, let me know!
