    Default Easy Casserole Recipe...or something

    I'm going to a potluck tonight and need to bring a sidedish, or something. Anyone have a recipe for something that I can't fuck up? Believe me, I can fuck up almost anything...so it has to be good. But I don't want to just make mac n cheese, want something with a little uniqueness! Thanks!

    Or perhaps I should just get a cake?

    Umm... Have you made Pigs in a Blanket?

    Get water chestnuts, bacon, and barbeque sauce, wrap the bacon around the chestnuts in a pan, pour barbeque sauce over the top, and stick toothpicks in the things, bake it.

    Or ham and cheese rings? Get ready made croissant dough, ham, cheese(can also be done with taco flavorings, ground beef, etc.) Unroll teh little pennant shaped dough things, line up the wider bottoms, overlap the edge, and slowly curve it into a circle. Cube ham, and put ham and cheese on overlapped edges. Fold the long part of the dough inwards over the top, so it will look like a ring.

    Or taco salad? ground beef, taco seasonings, salad, fritos...

    cake is good, try a fruitcake (try an ethnic or asian market) or cookie cake (e.g. mrs. fields).

    i did the cookie thing for a potluck and it was very popular. everyone loves dessert!

    Ooooh, sounds close to russian piroshki. Perhaps I'll call my mom in Moscow and get that recipe, although its not that easy from scratch, but can use insta-dough.

    Thats not quite it-but it looks good too! Made me hungry...

    But no, you overlap the wide ends, and slowly make a ring with a LOT of little sections of dough(hard to explain) and there's still filling that shows through after you've folded the points inwards...

    Cracker Barrel Hashbrown casserole.

    This recipe is WONDERFUL.
    ( read the reviews, it suggests a few changes that are really worth doing, makes it much better, has to do with the kinds of cans of soup to use......)

    God, I miss homemade perogies. I can't for the life of me get it right, and boxed ones suck.
    They don't sell homemade perogies anywhere in Vegas.....
    That's the only thing I'm homesick for here.

    My super easy casserole:

    Potatoes 3-4
    1 lb hamburger meat
    1 can corn (or any other veggie you wanna add)
    1-2 cans cream of mushroom or cream of chicken soup, or one of each
    Grated cheese (optional)

    Peel and slice potatoes (3-4 depending on size)
    Brown 1 lb hamburger
    Pour on corn
    Add soup over top to coat
    Season with salt/pepper/garlic salt, etc

    Cook on 350 in oven til potatoes are done (30-45 minutes or so)
    Add cheese on top and let melt

    You can also replace potatoes with rice, noodles, or tater tots.

    Ohgod, I am the opposite of the stereotypical slavic "mail order bride". Been too Americanized, lol! I can't cook for shit although used to make pelmeni from scratch w my grandmother. In russian pierogies are actually "pelmeni", and in Ukrainian they are "vareniki. Pierogie itself is Polish. Now, piroshki is russian for little baked bread pies, but different. Ooooh, can't stop fantasizing about russian food!

    When I went home last year I bought 4 dozen perogie and packed them in my suitcase to bring home.God..I miss perogies. I'm gonn ahave to make some my next days off. It's sooo time consuming.

    BUt yeah...make the hasbrown cassrole. It's wonderful!

    I went to Sasha's russian deli, practiced my 5 words of Polish with the salesgirl, and got me some pelmeni and Polish pierogies (no Ukie-style vareneki, but its close)

    I am eating the delicious pelmeni, authentic Siberian gangsta style...w butter, pepper, and vinegar!

    This can make a soup or a casserole. Chop up the following.
    Carrots
    large onion
    celery stick
    green beans
    potatoes
    additional vegetables of choice if you want, peas, corn, sweet potato is all nice
    small tin of baked beans - Heinz if you can get heinze baked beans. This is the secret ingredient, makes a world of difference to the flavour.
    handful or two of pearl barley
    handful or two of split peas
    handful or two of brown rice if you want
    stock cubes. I use at least two and add more if nessesary when its cooked for a while.
    meat of choice if you want, you can cube it or put in whole pieces, it works both ways - its also fantastic as a veggie dish.

    Throw it all in a large pan, fill with water and simmer for an hour or so. Or throw it all in a caserole dish and stick it in the oven. 10 minutes before eating you can throw some pasta in if you like (if you do this at the beginning it will disintergrate)

    If you make huge quantities of it its delicious the next day - the flavour seems to come out even more. Also you can freeze portions to use later.

    I believe this is the only dish ive never fucked up, lol!

    Oh!! My brain is stuck on perogie now, LOL, but...
    You can make a perogie casserole.

    You need
    Lasangna noodles
    Cottage cheese
    an onion
    Mashed potatoes ( instant never taste as good, but you can use)
    Colby cheese mix in the mashed potatoes

    Layer noodles, cottage cheese and mashed potatoes
    Top the last layer off with noodles, then butter and onions.
    Bake at 350 for abotu 30 minutes covered, then 10-15 uncovered.
    It's pretty good. Taste like a perogie.

    Or, if your really lazy and want the mess free version, but thoes large pasta shells, like you would use to make stuffed shells. Just fill them with cheesy mashed potatoes, put in a dish, cover with butter and onions and bake em. Thoes are pretty good to, but Im strange, and I like mashed potato filled pasta. Sometimes....I jus mix bowtie pasta with some cheesy mashed potatoes and eat it.

    Pierogies are my favorite!! My grandma made them from scratch - kick ass Polish woman. I love the Mrs. T's kind in the box too. I drown them in melted butter (Hello fat thighs!).

    I know how to make really good Buffalo wings! And I am from Buffalo so you KNOW they're the shit. Brought them to a potluck once and they went over really well.
    Here's my recipe (anyone else feel free to use it too):

    You will need:
    1 big pkg. of raw chicken wings.
    1 bottle of Frank's Buffalo Wing Hot Sauce
    or
    (Tabasco sauce, a stick of butter, celery salt and/or black pepper to taste)
    A little less than half a gallon of vegetable or canola oil
    A big deep pot or deep fryer (I use a big wok - lol)
    About 3 large whole carrots or half a small bag of baby carrots (depending on number of guests)
    About 3 stalks of celery
    1 jar of GOOD blue cheese

    I don't know if you have Frank's hot sauce where you are, but get a bottle of it. If you don't have Frank's, you can improvise and melt about 3/4 stick of butter (more or less depending on amount of chicken) in the microwave for about 45 seconds and mix in a bunch of Tabasco sauce until you get your desired amount of spiciness. A pinch of celery salt and some black pepper to taste. Sounds fattening? Fuck yeah it is. There are other kinds of wing sauces that might be better than the butter but I can't condone the use of any of them.

    You could probably also substitute BBQ sauce for the hot sauce if you really wanted to.

    Next, take a package of wings and separate the wing part from the drum stick. You'll be eating both. Cut off and throw away the little wing tip pieces though. I find a giant meat cleaver works best. Avoid fingers.

    At this point you will want to preheat your oven to about 350-400.

    You'll want to have a big pot (or a deep fryer if you have one) filled about halfway with either canola or vegetable oil. As long as the meat is covered with oil, then it's a good height for it and you'll be able to tell when you put the chicken in (you can always add more oil if you need to).
    Heat the oil slowly over a low to medium flame. It's ready for the chicken when you sprinkle some water into it and it sizzles. Carefully (with tongs) put the chicken into the oil. Turn the heat up to high. Watch as it starts bubbling. Yay! Be sure to rotate them occasionally so they don't stick to the bottom of your pot.

    Have the Frank's sauce ready in a bowl (some like to use a tupperware with a lid for shaking). Any butter should be thoroughly melted.

    When the chicken is crispy on the outside - you'll see the skin start to have big bubbles on the surface and feel crispier with your tongs and look golden brown, remove the wings and drain them for a few minutes on a bed of paper towels. Then, you can toss them in your bowl of hot sauce. Coat them completely.

    What I like to do here is bake the sauce covered wings on a cookie sheet for about 10 minutes so that the sauce really clings to the chicken skin, as well as making the skin crispier. This is really essential if you want them as authentic as possible.

    Serve with pieces of carrot and celery and blue cheese.

    And Mrs. T's are ok..but after you have the real thing, nothing compares. I wanna meet your grandma, LOL. I need her recipe!!!

    I brought in the potato and cheese vareneki, aka Ukrainian pierogies. I boiled them soft, then headet up some butter on the skillet. Sauteed some onions. Put the vareniki on top. Added freshly ground sea salt and freshly ground 3-pepper meddly.

    I fried them until golden brown and took them to the potluck. They WERE gone in under a minute, everyone LOVED them! Everyone else had some food leftover, but my tupperware was bare, lol!!

    Thanks for all the recipes, I'm going to try them out. Cooking is an accomplishment and I like to make people happy...even if I totally half-stepped it!
