    Default Tofu Recipe!!

OK guys, I need help. I wanna try tofu for the first time. I dont wanna pick a random recipe off the net, I want tried and true goodness!

Heres what I am looking for: Tofu as not the main ingredient. Just mixed in, so I can get used to it...
something good! Like...hmm....spaghetti with tofu mixed in the sauce?
something not already forign to me, that I know I like, and just add the tofu in and see how I like it.

Anyone good some good tofu recipes?

Seriously, a GREAT starter would be Tofu Chili I took it from a book I picked up a WHILLLLLEEEE back called 101 things to do with tofu. Really? I just wanted to try something that wasn't going to taste like tofu and this does not. I even have a thread somewhere in Body Business going through the process of me making it with Chefster T, My assistant.

Since then, I have experienced a LOT of recipes from this rather simple yet delicious book and it's compelled me to learn more about cooking, I mean sure, it started off trying to impress a girl, but whoa nelly, this book is just fab and great for my diet.

You can pick up the book for 10 bucks off of amazon.com or borders (our borders didn't carry it and it was recommended to me as a great starter.) And the recipe you're looking for is called: Ultimate Veggie Chili and it's on page 38.

Mash it up and mix it with meat, if you eat that. It works well in lasagna, meatloaf, and stuff. Or take soft tofu and substitute the yogurt in a smoothie. Tofu is a culinary chameleon and will basically take on whatever flavor it's incorporated with. But by itself, the soy taste takes getting used to if you've never had it before. I've been eating it my whole life and I love it!

A great starter recipie... take cubes of it along with some veggies, skewer and grill or griddle. Drench in either light oil or some sesame sauce.

I have had tofu instead of ground beef in my spaghetti sauce. I cut it into cubes, then cooked it (like sauteed it) and then made my spaghetti like usual, with the same veggies and spices and everything. It wasn't the same thing, but it was good, I did enjoy it.

A general tofu use (I don't even like tofu) is to buy extra firm tofu, shove it in the freezer for like a couple of days. Then take it out, thaw and wring it out with a cheesecloth. It give it a more sinewy texture.

cut the tofu into cubes, fry them until crispyish, set aside.

cut fresh broccoli, slice a tomato, and slice some carrots (about a cup of each)

place them in frying pan with some (abut 2 tbsp) oyster sauce (you can get it at most asian food stores, and some grocery stores in the "asian" food section) cook until the broccoli is nicely green and the carrots are soft (but not mushy) you might want to add the tomatoes last as they will cook faster.

at the end, add the tofu and mix it up in the sauce til its nicely coated.

    serve over rice.

you can use any kind of rice, but in my opinion the long grain jasmine rice is the BEST. you can also get that at an asian store, but may be available in smaller quantities a your regular grocery store, also in the asian section. if you get it at the asian food store, it'll come in a 50, 25, or 10 lb bag. but sits delicious, i usually go through a 10lb bag in 2 weeks. mmmmm yummy!

damn, now i think i'm going to go make some!

I love tofu. It can be turned into pretty much anything.... it's like wheat...it can be pasta, lasagna, bread, cookies, cake.. whatever. My favorite thing to do with it is to just cut it up in cubes (only the extra-firm kind, drained the soft kind is ickyyy) season it however you like (i'm a big fan of citrus, so i use lime juice, pepper and cilantro) and stir fry it with a little olive oil until it's crispy on the outside. You can either do a hot stir fry and cook vegetables along with it or just throw it in with fresh veggies in a wrap or salad. My favorite combos are cucumber, avocado, sprouts and tofu in a wrap with hummus and lemon juice ... deliciiousss

Stir fry with nuts and vegetables is nice.
If your concerned about health though you might want to google "soy dangers" and take the search results into consideration.

try making a stir fry noodle thing with those thick spagettie noodles you get at the asian restaurants with peanut sauce, soy, ginger all that and veggies until its nice and thick and gloopy and tastey then add in tofu.. i think tofu squares taste better if you cut them thin and first fry them a bit or coat them in bread crumbs and spices and fry them so they have a little crust .. then add them in

as for the tofu scare i follow two gurus.. dr. mercola and gary null.. mercola says no way its bad bad.. mr. null says real soy tofu, miso, tempeh and soymilk are good good.. it has been around thousands of years so i still use it .. just not the tvp like in morning star or meat substitutes but the real deal

We use tofu fairly regularly, even though I do eat meat. It's excellent in pasta sauce. We take extra-firm, drain it, crumble it, and throw it in a lightly oiled wok with onions and garlic. Feel free to add whatever else. Sometimes we throw in parley or whatever. Stirfry that for a bit, then just add to your sauce. I like it best when the wife bakes it. She cuts two packs into slices, soaks them in a marinade (of I'm not sure what), coats them in breadcrumbs and just bakes them. I know it takes awhile because of the high moisture content, but they're amazing.

Also, if you have a Trader Joe's by you, they have a bunch of really nice simmer sauces premade. There's a korma one, a punjab spinach one, etc. Cube tofu, cook it up a bit, then simmer in the sauce and serve over rice (jasmine or basmati).
waffles are just pancakes with little squares on them.

Love Trader Joe's! Good call on those simmer sauces. Your breaded recipe sounds great! If you want to drastically reduce the moisture content, try freezing it and then thawing it; it makes it much easier to squeeze all the moisture out of it, plus changes the texture, making it firmer, more porous (thereby more absorbent of marinades) and even kind of chewy. This is especially good to do if you're crumbling it like ground beef.

Thought I might as well follow up on Mast's book recommend. Here's a link to that title: 101 Things To Do With Tofu. It's designed for absolute beginners & I think you can pick it up pretty much anywhere, and it's an easy $10. If you try nothing else in the book, try the Tomato Onion Chowder! My favorite soup ever.

So Tofu pretty much takes the flavor of whatever you cook it with..but what is the texture like? I'm scaredd!

I mean...I found this seemingly good lasagna recipe, where the tofu kind of replaces the ricotta cheese, but you still use Mozerella. If I made that, the tofu would just taste like sause and cheese, right? I wont actually taste tofu? It'll be like, sneaked into the recipe?

Im just tryin to find more ways to add protien into my diet.....

The texture depends on a few things. There are two major categories of tofu, silken and firm. Silken needs to be blended into things, generally, but the result is smooth and creamy. You can substitute silken tofu anywhere you would use sour cream or yogurt. Great for a simple smoothie.

The texture of firm tofu can be spongy or chewy, depending on how much you press it (getting rid of the excess moisture) and whether or not you've frozen it first. Frozen and crumbled tofu has a similar texture to ground beef, for example.

As for the flavor, it is mild but not totally nonexistent (much like ricotta, to use your example, a very mild cheese). If you eat it by itself, you can detect a slight flavor, but combined with other things, it adapts to the dominant flavors in the dish.

Think of it this way. Tofu is an ingredient, with hundreds if not thousands of potential uses. You would NEVER take a spoonful of plain, raw flour, eat it all by itself, and then say, "Yuck, that's bland, tasteless and textureless. Therefore this 'flour' stuff must not be good to use in anything." It all depends on what you DO with it.

Mast, you are a naughty naughty little kitchen aid. I know why tofu turns you on. It adapts to the DOMINANT flavor. Therefore it must be . . . submissive.

    tofu is like rice....

it's not really that it takes the flavor of what you put on it, it's just boring without something else.

I don't really like tofu that much compared to the other meat substitutes out there.

My favorites are Ives links, Tofurkey (not their sausages though), Gimme Lean sausages and Gardenburger riblets.

This thread has so many good recipes that I can't wait to try.

My favorite tofu meal is really simple but it's easy, fast and healthy.

I use Extra firm tofu and fry it in a little bit of extra vigin olive oil to give it some flavor, pad thai noodles with peanut sauce and broccoli.

Thai kitchen makes instant single serve noodles that you microwave for 3 minutes. They are SO good and really convenient

Yo...that's hot. Can we get freaky in the kitchen? (You cook--I'll get naked) seems fair to me!

Now if you had substituted "tofu" with "steak"....well wouldn't that be hysterically gross...hehe what is wrong with me
