    Default Does this recipe seem weird to you?

    It calls for four egg whites and two large eggs. I've never used egg whites in a regular cake recipe before and that just seems like a lot of eggs... especially since it doesn't say anything about actually ADDING in those other two eggs. Should I put them in anyways? I was half way through this recipe before I saw this!

    Yeah that seems weird to me. You're right, they never do mention anything about adding the two whole eggs. Hmmm. I might find a different recipe.

    Yeah...it isnt right, I'd leave out the 2 large eggs, since it doesn't say to use them....

    What kind of cupcakes? Chiffon type cakes call for a lot of egg whites. You'd still need the yokes in the other two eggs to add richness and fat, otherwise the cake might be too dry. Makes sense to me. How did they turn out?

    ETA: Looked at the recipe. I think they made a mistake---the 2 eggs were to go with the other liquid ingredients, and the whites were to be whipped in seperately. But so long as you added the other 2 eggs, I'm sure they will be yummy and moist!

    They were a little bit flavorless but turned out okay. I think I did the right thing by adding in the eggs? I beat in the two eggs thoroughly and then beat in the egg whites. They were really spongey. Almost like an angelfood cake.

    Sounds like chiffon cake. Some chocolate frosting might punch up the flavor! Nothing like chocolate frosting on vanilla cupcakes!

    But I couldn't make chocolate frosting pink (pink=best color ever), so I used a buttercream frosting. I made some yellow cupcakes a bit ago and made that chocolate frosting recipe that Yek posted a few weeks ago... and I have some left over. I'll frost those last three.

    Well, angel food cake does call for egg whites instead of whole eggs which is why it's less fattening. Maybe these were suppose to be like that? Whole eggs will usually make the cake more dense while egg whites will make it a lighter cake. That's why pound cake is such a heavy cake because it calls for about 6 eggs typically. What you could do is cut up some strawberries, sprinkle either sugar or sweetener on them and put them on top of the cupcakes, providing you haven't added icing, then add a little whipped cream on top.
