    Default Next-Day Dinner Recipe Ideas Needed

    I've been looking through my cookbooks for ideas, but nothing is jumping out at me. I'm having a second date with a very awesome guy on Tuesday. I kinda wanna cook for him instead of going out to dinner. Here's the problem....he lives kinda far, but works really close to my house. So it makes sense for him to come straight from work, which unfortunately is IMMEDIATELY after I get home from work.

    Does anyone have some guaranteed AWESOME recipes that I can prepare the night before, that hold up perfectly for the next evening???? Of course, nothing messy and preferably nothing that will stick in my teeth.

    For dessert, I may make this chocolate flan cake I've heard about, which is basically chocolate cake with caramel flan on top of it...it's supposed to be DEEEE-LISH. I really don't care if the meal doesn't "match" the dessert.

    So if anyone has guaranteed perfect recipes, I'd love to hear them. We both pretty much like everything. Italian/Mexican/Japanese/Chinese/American/etc. Meat/Seafood/Veggies/etc. So I'm open to ANYTHING and EVERYTHING.

    Yeah, allrecipes is probably the best out there.I always look stuff up there when I need anything.

    yeah, I've seen that site and used recipes from it, but I was wondering if anyone knew of anything that can be semi prepared 24 hrs in advance and still be outstanding that next day. I don't cook all that often, so I don't know what has good staying power like that.

    Crockpot meals are always great in situations like this. Throw the stuff in before work, it's ready when you come home. Great timesaver, if you have one.
    waffles are just pancakes with little squares on them.

    A pound cake would hold up nicely for a dessert. Cole Slaw or Potato Salad keep well in the fridge. A cheeseball with some crackers isn't a bad idea either.

    I'd go with a lasagna, prepare it the day before, then all you gotta do s cook it the next day. I think lasagna taste better that way anyhow, causd the flavors have time to mingle overnight.

    You can have an appitizer and wine while to cooks.

    I second the crockpot meal. I always make my special curry stew in it and in six hours and coming home from work it was always perrrfect.

    I'd definitely go with wine and some nice cheese or appetizer while dinner is cooking in the oven. Guys love the smell of food in the oven when they come over and a little wine never hurts on a second date! Good luck and keep us posted if you need some breakfast recipes!

    Many things will be under an hour if you do all your prep - chopping and measuring - in advance.

    Kaylinn beat me to it; I was also going to suggest lasagna. Any lasagna recipe can be prepared the night before and refrigerated before baking, and it does taste much better for having been in the fridge all night. The flavors get to mingle more. Plus men LOVE lasagna.

    Add a salad and a bottle of wine and you've got instant romantic dinner, and your chocolate cake should go well with it. If you want to get really fancy, you can make lasagna roll-ups - instead of layering everything in the pan, you can spread each layer on an individual lasagna noodle, roll it up, and set it on its side. Do this until the pan is full and then top it with more sauce and shredded cheese. A single roll-up has fewer calories and you're likely to eat less of it this way, plus it looks fancy.

    Most can be kept in the fridge for a day before cooking. a list of some recipes you can make ahead of time.

    I ripped this out of Cosmo years ago. It's supposed to be a snack but if you pair it with rice & a veggie you've got a meal.

    Ingredients
    2 lbs salmon
    3/4 cup maple syrup
    1/4 cup soy sauce
    coarsely ground black pepper
    12 six-inch bamboo skewers

    Slice salmon into bite size pieces & put into a big ziploc with the maple syrup & soy sauce. Force the air out & put it in the fridge for 24 hours. At the same time put the skewers in water (this keeps them from scorching in the oven.) When you're ready to cook, turn on the broiler (every oven should have that setting). Skewer the salmon & dip one side of each in pepper. (The directions say to put them directly under the broiler, but I've always put them on a cookie sheet cause the sauce makes it messy & that's worked fine for me.) Broil for 1 minute on each side, or until just cooked through but still moist.

    Rice only takes 20 minutes (or you could do that the day before too) & heating up some frozen veggies won't take long either.
