    Ok, so I know that there are probably a million recipe threads out there, but I wanted to start a favorite healthy recipe thread -- one that included little to no cooking!

    Right now tomato sandwich is my obsession:

    toast two slices of bread (I like Shepherd's from Trader Joe's)
    add mayonaise and salt to taste ( I prefer Old Bay Seasoning)
    thinly slice a farm fresh tomato
    enjoy!

    Has anyone ever had this before? I was skeptical at first when my family told me about it, but I can't stop eating it now!

    We make the same thing here only we add a slice of cheese, generally mozerella... My daughter calls them magic sandwiches lol.

    That sandwich sounds good but I'm scared....I don't mind tomatoes but I don't exactly love them either. Maybe I'll try the cheese method.

    My fav no cook sandwich:

    1 whole wheat pita pocket
    1 tbsp plain yogurt
    Pre-cooked chicken strips
    1/2 tomato
    1/4 cup cucumber
    hot sauce to taste

    Mix together chicken, cucumber, and tomatoes, top with yogurt and hot sauce (as much as you want) stir together to a chicken salad type mixture. Fill pita.

    MOCK CHICKEN TOFU

    It tastes so much like chicken, but without all the hormones or antibiotics!

    INGREDIENTS:
    1-block firm tofu
    3 TB. canola oil (or butter)
    6 TB. soy sauce or Bragg's Liquid Aminos (or to taste)
    1/3 C. nutritional yeast (found at health food stores)
    2 tsp. Spike seasoning salt
    1/2 tsp. black pepper
    1 tsp. poultry seasoning (or*1/4 tsp*ground thyme &*3/4 tsp ground sage)

    DIRECTIONS:
    1. Drain tofu well. Cut into 1-inch cubes & press gently between paper towels.
    2. Heat oil in frying pan on med/hi heat.
    3. Add tofu & cook without turning for 5 minutes. This will allow the tofu to get nice & crisp.
    4. Turn tofu, cook for 4 more minutes on the other side.
    5. Turn off the heat & add the soy sauce. Stir to cover tofu.
    6. Add the remaining ingredients & toss to coat.
    7. Serve with brown rice to increase the protein content by four times, along with a BBQ, teriyaki, peanut, or sweet & sour sauce!

    MOCK CHICKEN TOFU WRAP

    INGREDIENTS:
    2 C. mock chicken tofu, from Mock Chicken Tofu recipe
    ¼ C. Veganaise, natural eggless mayonnaise
    1 carrot, grated and chopped
    ½ stalk celery, diced
    1 Tbsp. sweet pickle relish

    1 pkg. whole-wheat tortillas or chapatis
    1 med. Tomato, sliced and cut slices in half
    Lettuce leaves, washed and dried
    *
    DIRECTIONS:
    1. Mix first set of ingredients together and set aside.
    2. Heat whole-wheat tortilla in dry frying pan or microwave.
    3. Place on plate and fill down center with the lettuce, tomato slices and mock chicken salad.
    4. Roll tortilla and cut in half. Serve with baked chips and fat free salsa.

    MOCK TUNA SALAD

    *Asafetida, also known as hing, adds a delicious flavor similar to shallots & garlic to any recipe. It is a highly reputed digestive agent & is available at Indian grocers or specialty stores.

    INGREDIENTS:
    2 cans garbanzo beans (chickpeas)
    ½ cup celery, diced
    ½ cup pickle relish
    ½ cup Veganaise, mayonnaise, or sour cream
    ½ tsp. sea salt
    2 tsp. soy sauce or tamari
    ¼ cup nutritional yeast
    1 tsp. Old Bay Seasoning
    1/4 tsp. black pepper
    1/4 tsp. Asafetida (hing) or 1 TB onion, diced finely


    *DIRECTIONS:
    1. Mash garbanzo beans well with a potato masher or fork until mashed but somewhat chunky.
    2. Combine beans with remaining ingredients and mix thoroughly.
    3. Chill in refrigerator until ready to serve.

    MOCK TUNA MELT

    INGREDIENTS:
    Mock Tuna Salad, from Mock Tuna Salad recipe
    1- English muffin, halved
    2- Tomato slices
    2- American cheese slices

    DIRECTIONS:
    1. Toast the 2 muffin halves.
    2. Lay tomato slices ontop, add a scoop of Mock Tuna Salad.
    3. Top with cheese & microwave until melted.

    Hmm. Let's see here....
    The Shepherd's Bread is Trader Joe's house brand wheat bread without any "artificial colors, flavors or preservatives...sweetened with honey and malt."

    It's white in color and really good. The slices aren't too thin or thick. It's also Kosher.

    oo thanks for the mock tuna salad! as a vegan the only meat i have EVER missed is tuna, prob because i haven't found any replacement for it. I tried a similar recipe before and it wasn't too bad.

    -What ive been making lately is a stir fry. extra firm tofu marinated in Newman's Own Teriyaki Marinade. Olive oil. Fry tofu. Add in fresh spinach and bean sprouts and cook. After its done i sprinkle some dark flax seeds on it.
    haha im not much of a cook, but its pretty good!

    For bread i usually buy the sprouted grain Food For Life brand. The cinnamon raisin one is good. Use a non-hydrogentated margarine. I use Earth Balance, but i think Smart Balance is too (but the smart one isn't vegan)

    1/2 c oatmeal
    1/2 c fat free cottage cheese
    1 c eggbeaters (or four eggwhite and a full egg)
    1/8 c splenda
    cinnamon and vanilla to taste

    Blenderize and cook over low heat.

    I can't tell the difference between them and regular pancakes. They taste like rainbows and buttercups and unicorns and all things good. I eat them with sugar free syrup or berries. I was surprised when I finally made the recipe taste like pancakes, rather than protein vomit.

    Yea protein vomit thats what I was afraid of. Do you need the cinnamon or vanilla? Or can they just be plain? They must be pretty low cal too. I'm gonna have to try this.

    You really need something in them for flavor, otherwise they end up a bit bland. If you have banana, berries or nuts, toss them in after the blending and stir. But, yeah, not plain.

    The entire batch (with 1/4 c sugarfree syrup) comes out to:
    350 calories
    3 g fat
    37 g carbs
    43g protein

    (but it's enough for two really big pancakes)

    I know I have an easy protein pudding recipe. I'll check around for it.

    Edit: okay, I can't effing find it. But as soon as I can get some fat free milk, I'll make some and share the resulting recipe here.

    Cheesecake!

    3/4 cup of fat free cottage cheese (you can also use riccota)
    1/2 scoop of protein powder (vanilla flavor works best)
    1 packet of Splenda
    1 tbsp sugar free instant pudding mix (cheesecake or vanilla flavor)
    4-5 tbsp of fat free milk or water (helps thin out mixture)

    Blenderize for 1 minute. You can top with sliced almonds, strawberries, etc. Chill for at least 20 minutes.

    Nutrition Facts: (based on my protein and cheesecake-style pudding mix)

    200 calories
    0 g fat
    35 g protein
    2 grams carbs

    I make that tomato sandwich too! I usually put in mozz, but sometimes I'll add one or all of the following:

    sprouts
    cucumber slices
    hummus (obv no mayo if I'm using the hummus...)

    Here's my addition to the thread:

    Blend instant pudding mix with silken tofu. Also blend in some milk or soy milk so it's not QUITE so thick. Put in freezer for a while.

    I can actually convince myself that I'm having ice cream, yet I'm really having healthy protein (I'll admit I can't ALWAYS convince myself of that, depends which flavor pudding mix I use...)

    Just wanted to review: I tried this recipe (except I used 2 full eggs instead of egg whites) and it was fantastic. I love pancakes but I don't make them very often because I try to avoid flour... I guesss the oatmeal subs in for flour??? Anyway I will definitely be using this recipe again.

    Vegetarian Black Bean Burrito
    (recipe from )

    Prep time: 5 min; Total time: 5 min

    Ingredients

    1 whole wheat tortilla per person
    1/2 c. fat free refried beans (black or pinto) per person
    1-2 tomatoes
    1/8 avocado per person
    Broccoli sprouts
    Baby spinach (optional)
    Grated cheese (optional)

    Directions

    1. Take a tortilla and fill it with about 1/2 c. of beans.
    2. Dice your tomato and add as much as you want.
    3. Add about 1/8 of the avocado.
    4. Then add some broccoli sprouts.
    5. If you want, wash the spinach and add some.
    6. Last add the grated cheese.
    7. Fold up the tortilla, microwave it for 1 minute & enjoy!

    Tips
    * You can substitute alfalfa sprouts for broccoli sprouts if you wish. Broccoli sprouts pack even more antioxidants than broccoli, so if you are not good at eating your broccoli, they are a fantastic choice.

    * When shopping for tortillas, check the nutrition information. Find ones without trans-fats & shop around to find the tortillas with most fiber.

    * You can substitute corn tortillas for the whole wheat tortillas if you do not eat wheat.

    * I chose a vegetarian black bean burrito recipe because black beans are full of antioxidants. However, all beans are great for you. If you don't have black beans around, use pintos.
