    Ideas for Salmon

    I am on a low carb diet, and surprisingly I really don't mind living off of tuna and salad and eggs.

    My "thing" is scrambled eggs with low fat feta, spinach and smoked salmon. The one that is salty and flaky, not lox, it comes in 4 ounce filets at the grocery store for $4-6 a pack. I have been eating this several times a week, and I love it.

    But I think there must be some other ways to cook it that would be more convenient for a packed lunch, as I would love to have it for lunch when I eat at school. Maybe like a crustless quiche thing?

    Ideas?

    Have you ever had salmon candy? You can eat it right out of the package; it's really sweet and yummy.

    Hit the kitchenware store & buy a cedar plank for broiling/BBQ-ing fresh salmon on the plank. It's incredible...

    OMG LJ, thank you!!!!

    I eat salmon at least once a week and could always use more recipes. Generally I just throw a bunch of spices (Tony Cachere's cajun spice is awesome) and lemon juice onto the fish, sear the steak on one side then slow cook the other side in a frying pan.
    I cant' wait to try the poached salmon with mushrooms.

    I'll broil it or pan-fry it with teriyaki and lemon, along with other favored seasonings, and take the cold leftovers and flake them into a salad of choice for lunch. Pretty good.

    OMG yes! The cedar smoke adds sooooo much flavour to the salmon but no calories or fat from sauces or anything like that. It is my favourite way to eat salmon by far.

    Also the planks that you buy at the grocery store can be pretty expensive sometimes. You can just go to home depot and buy a huge cedar plank, have them plane it and cut it into smaller pieces and it works out cheaper if you eat it often.

    Salmon with Ginger Salsa
    Serves 4, 280 calories/serving

    2 peaches or mangoes, diced
    1 large tomato, diced (drain juice)
    4 scallions, chopped
    2 Tbs. cilantro, chopped
    2 tsp. fresh ginger root, finely minced (or 1/2 tsp. ground ginger)
    1 Tvs. balsamic vinegar
    Juice of 1 lemon
    4 salmon steaks, 6 oz. each

    -In a bowl, mix first six ingredients together to make a salsa.
    -Heat grill and spray with vegetable spray.
    -Sprinkle lemon jiue over slamon. Grill salmon steaks 5-6 minutes on each side.
    -Remove salmon from grill and top each steak with salsa.

    No kidding! I aways boggle likewise at suggestions for something called "leftover wine", whatever that is.

    That Pan-Seared Salmon recipe sounds particularly deeelish!

    Salmon, salt pepper, onions, fresh dill, butter, lemon slices. Wrap it up in foil, make it a pouch. Cook it for a while in a pre-heated oven, maybe 350-375 degrees.

    How long does it take? I don't know, but its really easy and fucking awesome. My dad's recipe for this is famous.

    Oh, yeah, I love it. Could eat it about every day. But when we buy a one-pound slab, it's a bit much for two people, and the leftovers really do pep up a salad.

    I didn't add the other stuff I use with it. Favorite is broiled on top of olive oil, on a bed of fresh spinach, with garlic, lemon, dill, pepper, and crushed red pepper on it. Maybe some teriyaki. I ring the salmon with chunks of different colored bell pepper against the spinach backdrop. I use thin strips of pasilla pepper, onion, and maybe some other pepper to make the top look all fancy. I like to toss on some capers, too.

    I'm also not above tossing salmon into stir-fry and flaking it throughout as it cooks through. It peps up stir-fry, too.

    Well, since you're on a low carb diet, many of the recipes above wouldn't apply to your way of eating (although they sound delish).

    If you're planning to do the crustless quiche thing try using baby swiss, the salmon, some shallot and fresh dill. After eating crustless quiche for so many years, I wouldn't even consider having one with a crust now actually!

    Make salmon pinwheels for a quick easy meal. Spread pieces of the salmon with cream cheese that is mixed with whatever spices you like, although I think snipped chives go well with this one.

    If you'd like to go fancy, but low carb, try making crepes with Carbquik (low carb Bisquik type stuff that you can find on netrition.com). Make the crepes, fill them with salmon, roll them up and finish with a dill sauce made from heavy cream, a shot of white wine, some dijon mustard and some dill.

    Hope this helps! Low carb diets are not easy, but they can be tasty.
